Dukka - Egyptian Spice Blend for Bread Dipping or Topping image

For ZWT #6. I got this recipe from Egyptdailynews.com site. It says that it is used for dipping bread after first dipping it in olive oil. I think it would make an interesting topping for various breads if it is left a little coarser.

1 tablespoon Italian or curly parsley, chopped
1 tablespoon garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon ground black pepper
1/2 teaspoon Kosher salt or ground sea salt
1/2 teaspoon rosemary, chopped
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon olive oil
1/8 teaspoon fresh lemon juice
Additional olive oil for serving
Bread for dipping

Steps:

  • Combine all of the ingredients, except oil and lemon, in small food processor. Pulse briefly, just until all ingredients are evenly chopped. Stir in 1/2 teaspoon oil and lemon juice. Refrigerate in airtight container. To serve, combine about 1 1/2 teaspoons spice blend with 3 to 4 tablespoons olive oil on a small dish. Serve with bread for dipping.

Tips:

  • Use fresh herbs and spices: Fresh herbs and spices will give your bread dipping spice a more vibrant flavor. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount since they are more concentrated.
  • Experiment with different combinations of herbs and spices: There are endless possibilities when it comes to creating your own bread dipping spice blend. Some popular combinations include rosemary and garlic, thyme and oregano, or basil and chili flakes. Get creative and have fun!
  • Toast the spices before using: Toasting the spices will bring out their flavor and aroma. You can toast them in a dry skillet over medium heat for a few minutes, or you can place them on a baking sheet and toast them in the oven at 350 degrees Fahrenheit for 10-15 minutes.
  • Grind the spices finely: Grinding the spices finely will help them to evenly coat the bread. You can use a mortar and pestle or a spice grinder to grind the spices.
  • Store the spice blend in an airtight container: Store the spice blend in an airtight container in a cool, dark place. It will keep for several months.

Conclusion:

Bread dipping spice is a versatile condiment that can be used to add flavor to a variety of dishes. It is easy to make and can be tailored to your own taste preferences. With so many different recipes to choose from, you're sure to find one that you love. So next time you're serving bread, don't forget to offer a delicious bread dipping spice on the side!
