1/2 cup milk
3 pounds lean (7 percent) ground turkey, preferably organic
1 medium onion, finely chopped
2 large eggs, lightly beaten
1/4 cup plus 2 tablespoons ketchup
1/4 cup chopped flat-leaf parsley
1 tablespoon plus 1 teaspoon Dijon mustard
1 tablespoon coarse salt
1 teaspoon rubbed sage
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place panko and milk in a large bowl; stir until well combined. Let stand 5 minutes.
  • Add turkey, onions, eggs, 1/4 cup ketchup, parsley, mustard, salt, sage, and pepper to breadcrumb mixture. Gently mix until well combined. Transfer mixture to a 9 3/4-inch-by-5 3/4-inch loaf pan. Brush top with remaining 2 tablespoons ketchup.

This is a recipe I found on Oprah's website. My DH loves it! The recipe is for cooking in a bread machine, but I do it the conventional oven method since my bread machine only makes small loaves.

1/2 lb dark turkey meat
1/2 lb white turkey meat
1/2 cup onion, diced
2 celery ribs, chopped
1 cup mushroom, chopped
1/4 cup bell pepper, diced
1/2 cup tomato sauce
1 cup parmesan cheese, grated
2 eggs
1 cup breadcrumbs
1 (6 ounce) can tomatoes, diced
1 tablespoon dried chives
1 tablespoon sodium-free seasoning
salt and pepper
herbs
1 dash Tabasco sauce
1 dash Worcestershire sauce
1/4 cup beer

Steps:

  • Combine all ingredients (reserving a few tablespoons of diced tomatoes) and knead them in to a loaf.
  • Place in the bread pan, and place the pan in the bread machine.
  • Cover the top of the meatloaf with the remaining diced tomatoes (you can substitute ketchup).
  • Cook for 70 minutes or until done. Remove the pan from the bread machine and drain off any liquid. Be careful, as the liquid will be very hot.
  • Let the meatloaf settle for several minutes, then remove it from the bread pan.
  • Recommended technique: Make sure that your bread machine has a "Manual" or "Cook only" cycle. Do not attempt this recipe in a bread machine that does not have one. As an alternative, you can make this recipe in a loaf pan in a 350º oven for about an hour.

1 lb ground beef (I use turkey) or 1 lb ground turkey (I use turkey)
1 lb ground pork
2 slices of soft bread, torn into pieces
3/4 cup milk
2 tablespoons minced onions
2 eggs
1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon dry mustard
1/8 teaspoon celery salt
1/8 teaspoon garlic salt
2 teaspoons Worcestershire sauce
3/4 cup ketchup
3 tablespoons brown sugar

Steps:

  • Break up the meat.
  • Place all ingredients into bread machine and start on quick bread/cake cycle.
  • When machine is done mixing, pause the machine, remove the paddle, and smooth the loaf down if you like.

1 teaspoon olive oil
1 medium carrot, cut into 1/8-inch dice
3/4 pound cremini mushrooms, trimmed and very finely chopped in a food processor
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup finely chopped fresh parsley
1/4 cup plus 1 tablespoon ketchup
1 cup fine fresh bread crumbs (from 2 slices firm white sandwich bread)
1/3 cup 1% milk
1 whole large egg, lightly beaten
1 large egg white, lightly beaten
1 1/4 pound ground turkey (mix of dark and light meat)
Accompaniment:roasted red pepper tomato sauce or ketchup

Steps:

  • Preheat oven to 400°F.
  • Cook onion and garlic in oil in a 12-inch nonstick skillet over moderate heat, stirring, until onion is softened, about 2 minutes. Add carrot and cook, stirring, until softened, about 3 minutes.
