Time 2h20m

Yield 6 servings

Number Of Ingredients 20

1 tablespoon butter
4 cups leftover Danish or donuts, cut into 1/2-inch cubes
3 cups milk
1/2 cup dried apricots, chopped
1/2 cup chopped dried cranberries, craisins and/or sultanas (small seedless raisins)
1/4 cup amaretto, whiskey, or warm water
3 eggs
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup fresh strawberries, cleaned
1/2 cup fresh raspberries
1/2 cup fresh blackberries or boysenberries
1 banana, peeled
1 peach, peeled, pit removed, and sliced
1 lemon, juiced
1 pint vanilla frozen yogurt or vanilla ice cream, softened
6 sprigs fresh mint, for garnish

Steps:

  • Grease a 2-quart baking dish with butter. Spread the cubed baked goods evenly in the prepared baking dish. Heat the milk in a small saucepan until it is scalding. In a separate small saucepan, heat the apricots and cranberries with the liqueur (or water) and let simmer for about 5 minutes, or until the dried fruits begin to soften. In a small bowl, whisk together eggs, sugar, vanilla, salt, cinnamon, and nutmeg. Add the hot milk, a small amount at a time, to the egg mixture and whisk together (known as a liaison) to temper the mixture by combining gently and gradually without cooking the eggs. Spread the apricots and raisins evenly over the bread in the baking dish, the pour the liaison into the baking dish, distributing evenly.
  • Preheat oven to 350 degrees F.
  • Let the baking dish stand for about 20 minutes to allow the liquid to absorb into the cubed baked goods.
  • Prepare a bain marie by placing the baking dish into a larger pan or dish, placing the arrangement into the preheated oven, and then pouring hot water into the outer dish (without splashing any into the custard dish). Bake until the pudding firms up and puffs up and a toothpick inserted in the center comes out clean, about 1 hour. Remove from oven and from water bath and let rest 10 minutes. Serve warm or cooled.
  • While the bread pudding is baking, prepare the cold fruit soup. To a blender add strawberries, raspberries, blackberries, peeled banana, peach and lemon juice. Blend until smooth and strain into a bowl. Return strained fruit to blender and add softened frozen yogurt, blending to combine. Serve as a topping to the Queen's Bread Custard, in demitasse cups as an accompaniment, or by itself as an independent dessert soup.

4 cups sugar
2 1/4 cups water
4 ounces dried apricots, thinly sliced
4 ounces dried tart cherries or dried cranberries

2 cups whole milk
8 large egg yolks
1 1/2 24-ounce loaves sliced white bread, crusts trimmed, each slice halved

Increase heat; boil without stirring until deep amber color, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 12 minutes. Remove from heat. Gradually whisk in 1 cup reserved soaking liquid (mixture will bubble vigorously). Stir over low heat until caramel thickens slightly, about 6 minutes. Add 1 cup cream. Bring to boil and simmer until caramel thickens slightly, about 3 minutes. Remove from heat. Cool caramel sauce 30 minutes, whisking occasionally. (Can be made 1 day ahead. Cover caramel sauce and fruit separately and refrigerate.)
  • Preheat oven to 350°F. Bring 2 cups cream and milk to simmer in another medium saucepan. Remove from heat. Whisk 2 cups sugar and egg yolks in large bowl to blend. Gradually whisk in warm milk mixture. Cool custard slightly. Lightly butter 13 x 9 x 2-inch glass baking dish. Arrange enough bread in single layer over bottom and up sides of prepared dish to cover completely, trimming bread to fit. Sprinkle reserved fruit over bread. Arrange remaining bread slices over fruit, trimming to fit and overlapping slightly.
  • Pour custard over bread. Press bread gently to submerge into custard. Let stand until custard is absorbed, about 10 minutes. Bake until custard is set and bread is golden brown on top, about 55 minutes.
  • Rewarm sauce over low heat. Serve pudding warm with sauce.

FRUITY BREAD PUDDING FOR TWO

Fruity Bread Pudding for Two image

This is a great way to use up leftover bread. I like this made with challah but you could also make it with French or Italian bread. Use whatever dried fruit you have on hand - my personal favourite is apricots, but it is also good with cranberries or cherries. Please note that the standing time is included in the cooking time.

Maltese Bread Pudding ( Using up Stale Bread) image

This is a recipe to use up stale bread, originally devised when it was considered a sin to throw away breadbecause of teh association with Christ . The result is a luscious fudgy cake that can be cut up into squares and has nothing to do with thne usual bread and butter puddings . I love to eat this cake in summer , cold from the fridge. Please do try it, it wont cost you much to make. You might be pleasantly surprised. I use a maltese crusty loaf but any bread will do.

Tips:

  • Choose the right bread: Stale or day-old bread is ideal for bread pudding, as it absorbs the custard mixture more easily. Use a sturdy bread that can hold its shape, such as French bread, challah, or brioche.
  • Make sure the custard is thick: The custard should be thick enough to coat the back of a spoon. If it's too thin, it will make the bread pudding soggy.
  • Don't overbake the bread pudding: Bread pudding is done when it is set in the center and a toothpick inserted in the center comes out clean. Overbaking will make the bread pudding dry and tough.
  • Serve the bread pudding warm or at room temperature: Bread pudding is best served warm or at room temperature. You can also serve it chilled, but it will be more dense and less flavorful.
  • Garnish the bread pudding with fresh fruit, whipped cream, or ice cream: Garnish the bread pudding with fresh fruit, whipped cream, or ice cream to make it more festive and delicious.

Conclusion:

Bread pudding is a classic dessert that is easy to make and can be enjoyed by people of all ages. It is a great way to use up leftover bread, and it can be made with a variety of different ingredients, so you can easily customize it to your own taste. Whether you serve it warm, at room temperature, or chilled, bread pudding is a delicious and satisfying dessert that is sure to please everyone.
