Categories     Mustard     Quick & Easy     Mayonnaise     Pork Chop     Pan-Fry     Sage     Bon Appétit

Yield Makes 2 servings

Number Of Ingredients 12

3/4 cup panko (Japanese breadcrumbs)
1 tablespoon chopped fresh sage
1 teaspoon grated lemon peel
1/2 teaspoon freshly ground black pepper
1 large egg
2 tablespoons water
1 tablespoon mayonnaise
1 tablespoon Dijon mustard
2 10- to 12-ounce pork cutlets
3 tablespoons garlic-flavored olive oil
sage sprigs (optional)
Lemon wedges

Steps:

  • Combine first 4 ingredients on plate. Whisk egg and 2 tablespoons water in medium bowl to blend. Whisk mayonnaise and mustard in small bowl. Dredge pork cutlets with mayonnaise-mustard mixture; dip into beaten egg, then coat cutlets with panko crumb mixture. Transfer to plate.
  • Heat oil in heavy medium skillet over medium-high heat. Add pork; cook until no longer pink on inside and crumbs are golden brown, about 5 minutes per side. Transfer pork cutlets to 2 plates. Garnish with sage sprigs, if desired. Serve with lemon wedges.

Tips:

  • To ensure a crispy coating, double-dredge the pork cutlets in the breadcrumb mixture. This will help the breading adhere better and prevent it from falling off during cooking.
  • If you don't have a meat mallet, you can use a rolling pin to pound the pork cutlets thin. Just be sure to cover the cutlets with plastic wrap before pounding to prevent them from tearing.
  • For a more flavorful breading, use a combination of different types of bread crumbs, such as panko, Italian bread crumbs, and seasoned bread crumbs.
  • If you want a crispy coating without frying, you can also bake the pork cutlets in the oven at 425 degrees Fahrenheit for 15-20 minutes, or until cooked through.
  • Serve the pork cutlets immediately with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple green salad.

Conclusion:

Breaded mustard-sage pork cutlets are a simple yet delicious dish that is perfect for a weeknight meal. The pork cutlets are pounded thin and coated in a flavorful breading made with bread crumbs, mustard, and sage. They are then pan-fried until golden brown and crispy. Serve the pork cutlets immediately with your favorite sides for a satisfying meal that the whole family will enjoy.
