Steps:
- In a large soup pot, combine 6 cups water with 8 cups chicken broth and 1 Tbsp sea salt. Bring to a boil then add chicken thighs and boil partially covered 20 min while you prep the vegetables, skimming off any foam that rises to the top.
- In a large skillet over medium/high heat, add 2 Tbsp olive oil and sauté onion and celery until softened then transfer to the pot.
- Add pasta and sliced carrots to the soup pot and continue cooking for 15 min at a low boil or until pasta is at the desired softness.
- While pasta is cooking, remove chicken thighs from the pot and use either forks or your hands to shred the chicken, discarding any bones and fat which should come off easily. Return shredded chicken to the pot.
- Season soup with 1 tsp Mrs. Dash (or your favorite seasoning) and more salt to taste if needed. Press in 1 garlic clove. Finally, add 3 Tbsp dill and remove from heat. Enjoy!

Steps:
- Coat a large stock pot with olive oil and add the onions, celery and carrots. Season with salt, to taste, and bring the pot to medium-high heat. Cook the vegetables until they start to soften and are very aromatic, about 10 minutes. Add in the garlic, crushed red pepper and thyme and cook for another 2 to 3 minutes. Add the chicken and fill the pot with enough water to cover the chicken. Add the bay leaves, bring the ingredients to a boil, then reduce the heat to a simmer. Cook for 30 minutes and skim off any particles that accumulate on the surface. Squeeze the juice of the 2 lemon halves into the soup and drop in the lemon halves. Add the cinnamon and nutmeg and taste for seasoning. Adjust the flavors with salt and pepper, if needed. Simmer the soup for an additional hour.
- While the soup is simmering, bring another pot of well-salted water to a boil over high heat. Add the pasta and cook until "al dente," firm but not crunchy. Drain the pasta and transfer to a medium bowl. Add 1 teaspoon of olive oil and toss. Reserve.
- After the soup has finished, switch the heat off and remove the chicken to a cutting board. Discard the lemon halves, thyme and bay leaves. Let the chicken cool, then remove the bones and discard. Pull the meat into bite-sized pieces and return them to the pot. Taste the soup for seasoning, which should be spicy with a bright lemon flavor and a warm cinnamon chicken feel. It should be very full-flavored and warm your soul. Rinse the beans and add them to the pot. Adjust the seasoning, if needed.
- Spoon some of the reserved pasta into the bottom of each serving bowl and ladle the hot soup over the pasta. Garnish with the chopped cilantro and serve. This soup is perfect for a cold day! YAY!

CHICKEN NOODLE SOUP (ANNE BURRELL)
This is a FoodNetwork Anne Burrell Recipe ... posting to try later ... sounds delicious! Website comments suggested cutting back amounts on the lemon, cinnamon, nutmeg and red pepper ... maybe start with lesser amounts and add to your taste (esp. with the lemon).

- After the soup has finished, switch the heat off and remove the chicken to a cutting board. (I would use a baking pan to catch the drippings.) Discard the lemon halves, thyme and bay leaves. Let the chicken cool, then remove and discard the bones. Pull the meat into bite-sized pieces and return them to the pot. Taste the soup for seasoning.
- Rinse the beans and add them to the pot. Adjust the seasoning, if needed.
- Spoon some of the reserved pasta into the bottom of each serving bowl and ladle the hot soup over the pasta. Garnish with the chopped cilantro and serve.
Tips:
- Select the Right Chicken: Choose a whole chicken or chicken parts with bones for a richer flavor. Bone-in, skin-on chicken will yield the most flavorful broth.
- Roast the Chicken: Roasting the chicken before adding it to the soup enhances its flavor and color. This step is optional but highly recommended for a more flavorful soup.
- Use Fresh Vegetables: Fresh vegetables will provide the best flavor and texture to your soup. Choose a variety of vegetables that you enjoy, such as carrots, celery, onions, and potatoes.
- Season Generously: Don't be afraid to season your soup well. Salt, pepper, garlic, and herbs are all essential for creating a flavorful broth. You can also add other spices and seasonings to your taste.
- Simmer, Don't Boil: Bring the soup to a boil, then reduce the heat to a simmer. Simmering allows the flavors to develop and meld together without overcooking the vegetables.
- Add Noodles at the End: Add the noodles to the soup during the last 10-15 minutes of cooking. This will prevent them from becoming overcooked and mushy.
Conclusion:
Brian's Chicken Noodle Soup is a classic comfort food that is easy to make and loved by people of all ages. With its simple ingredients and flavorful broth, this soup is sure to become a staple in your kitchen. So next time you're feeling under the weather or just craving a warm and comforting meal, give this recipe a try. You won't be disappointed!
