Dressing:

2 cups pineapple chunks, drained
1/3 cup slivered almonds
1/3 cup cranraisins
1 apple diced
1 cup fat free mayo
2 Tablespoons vinegar (I use rice vinegar)
2 Tablespoons Splenda

  • Drain your pineapple juice and add the pineapple to a bowl, along with the slaw, almonds, cranraisins, and diced apple. Combine your dressing ingredients and add to the above. Chill for 2 - 3 hours before serving.

Tips:

  • For a sweeter slaw, use a sweeter variety of apple, such as Fuji or Honeycrisp.
  • If you don't have any celery seeds, you can use caraway seeds instead.
  • To make the slaw ahead of time, prepare it up to 24 hours in advance and store it in the refrigerator. Just be sure to drain off any excess liquid before serving.
