a 1-pound eggplant, cut lengthwise into 1/3-inch-thick slices
2 teaspoons salt
2 tablespoons olive oil
3 to 4 tablespoons (about 2 ounces) soft mild goat cheese, or to taste
1 tomato, seeded and diced
1 1/2 tablespoons minced fresh parsley leaves

Steps:

  • Working with 4 inner eggplant slices, reserving the remaining slices for another use, rub the salt into both sides of each slice and let the eggplant drain in a colander for 10 minutes. Rinse the eggplant and pat it dry. Brush both sides of each eggplant slice with the oil and on a baking sheet broil the eggplant under a preheated broiler about 3 inches form the heat for 3 to 4 minutes on each side, or until it is golden and tender. 3 tablespoons olive oil
2 large garlic cloves, minced
1 12-inch-long piece baguette, cut horizontally in half
1 small eggplant, cut lengthwise into six 1/2-inch-thick slices
3 medium tomatoes, cut into 10 slices total
3 ounces soft fresh goat cheese (such as Montrachet)
12 fresh basil leaves

  • Prepare barbecue (medium-high heat) or preheat broiler. Combine oil and garlic in small bowl. Let stand 5 minutes.

1/3 cup olive oil
1 onion, chopped
4 ounces mushrooms, chopped
2 garlic cloves, minced
1 cup bulgur
1/4 cup sun-dried tomato, chopped
2 cups chicken stock or 2 cups vegetable stock
2 eggplants
salt and pepper
4 ounces goat cheese
4 cups tomato sauce
1/4 cup basil

Steps:

  • Heat 2 tbsp of the oil in a skillet over medium heat; cook onion, mushrooms and garlic until softened, about 5 minutes.
  • Add bulgur and sun-dried tomatoes and stir until coated.
  • Add stock and bring to a boil then reduce heat and let simmer covered for 20 minutes or until the liquid is absorbed. Transfer to bowl and set aside.
  • Preheat skillet to medium heat and add oil.
  • Peel 2 inch wide strips of skin from opposite sides of eggplants and discard.
  • Cut each eggplant lengthwise into 6 slices about 1/4 inch thick. Brush both sides with oil and sprinkle with salt and pepper. Grill slices in oiled skillet turning once until golden and tender about 10 minutes. Transfer to tray and set aside.
  • Preheat oven to 375 degrees.
  • Stir goat cheese into bulgur mixture.
