Steps:

  • Heat broiler. Brush a rimmed baking sheet with 1 tablespoon oil. Arrange zucchini in a single layer, cut side up. Brush with 1 tablespoon oil and season with salt and pepper. Broil until zucchini are deep golden brown, 8 to 10 minutes.

Canola oil, for brushing
Kosher salt and freshly ground black pepper
1 cup fresh parsley leaves
1/2 cup fresh cilantro leaves
1/4 cup grated Parmesan
2 tablespoons pine nuts
1/4 to 1/3 cup olive oil
2 cups nonfat or 2-percent Greek yogurt
3 medium zucchini, cut into 1-inch-thick rounds
Canola oil, for brushing
Kosher salt and freshly ground black pepper
Olive oil, for drizzling

Steps:

  • For the jalapeno yogurt dipping sauce: Heat the grill to high. Brush the jalapenos with canola oil and sprinkle with salt and pepper. Grill, covered, turning occasionally, until charred on all sides and tender, 8 to 10 minutes. Remove to a cutting board; leave the grill on.
  • Halve the jalapenos lengthwise and remove the seeds; leave the skin on. Put the jalapenos in a food processor with the parsley, cilantro, Parmesan, pine nuts and some salt and pepper; pulse until roughly chopped. With the machine running, drizzle in the olive oil until the mixture is smooth and thick. Taste and season as desired. Put the yogurt in a bowl and whisk until smooth. Swirl the pesto into the yogurt and set aside.
  • For the zucchini skewers: Thread 3 or 4 zucchini rounds onto two parallel skewers, so that the cut sides will lay flat on the grill. Brush the zucchini with canola oil and season with salt and pepper. Grill, uncovered, until charred and tender, 2 to 3 minutes per side. Transfer to a platter and drizzle with some olive oil. Serve with the jalapeno yogurt sauce.

I created this dish years ago because I did not care for the taste and texture of soft cooked zucchini. This has been a family favorite ever since. I am giving the ingredients for one serving and you can simply multiply it for the number you wish to make.

1 small baby zucchini (approx. 8 inch , not the big fat ones)
1 teaspoon melted butter or 1 teaspoon olive oil
1 tablespoon grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
1 pinch sweet paprika

Steps:

  • Wash off zucchini, cut off ends and split lengthwise.
  • Lay the split pieces of zucchini cut side up in a lightly greased baking dish.
  • Pour over the butter or oil.
  • Sprinkle the cheese evenly over the cut edge.

salt
2 tablespoons plain flour, for dusting
3 tablespoons vegetable oil, i always try not to use more but the zucchini will quickly absorb it at first. (for frying)
1 3/4 cups thick plain yogurt (more or less, see intro)
2 garlic cloves, crushed, more if you like
1 tablespoon freshly chopped dill
hot sauce (optional)

Steps:

  • Place the zucchini in a colander, sprinkle with salt and leave in the sink or over a plate for approx 20 minutes Dry the zucchini slices on kitchen paper then toss and coat with flour on all sides.
  • Heat the oil in a large frying pan until very hot then add the zucchini slices and fry on both sides until golden brown.
  • Drain on kitchen paper.
  • Place the garlic, dill, hot sauce if using, yogurt in a mixing bowl and mix well.
  • Place the yoghurt in a wide shallow serving dish and top with the drained zucchini.
  • Gently mix.
