BROOKVILLE SWEET & SOUR COLESLAW

Brookville Sweet & Sour Coleslaw image

From the old Brookville Hotel restaurant in Kansas, famous for their fried chicken, slaw, and creamed corn, all served family style. (The creamed corn is recipe #44906) This was the recipe that finally got me to eat cole slaw; everything else on their table was so good I decided to take a chance and was hooked forever! Cook time does not include initial chilling of cabbage & total servings vary depending on serving size.

Provided by carvalhohm2

Number Of Ingredients 5

1 1/2 lbs of finely shredded cabbage
1 tsp salt
2/3 cup sugar
1/3 cup vinegar (white - distilled)
1 cup whipping cream

Steps:

  • Place shredded cabbage in a bowl and refrigerate for at least 2 hours. 30 minutes prior to serving mix remaining ingredients in a bowl. Toss dressing with shredded cabbage. Chill and serve.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help them absorb the dressing more evenly.
  • If you don't have a mandoline, you can use a food processor fitted with a shredding blade. Just be careful not to over-shred the vegetables.
  • Feel free to add other vegetables to your coleslaw, such as broccoli florets, bell peppers, or snap peas.
  • If you like a sweeter coleslaw, add a little more sugar or honey to the dressing.
  • If you like a tangier coleslaw, add a little more vinegar to the dressing.
  • Let the coleslaw chill in the refrigerator for at least 30 minutes before serving. This will allow the flavors to meld together.
  • Serve coleslaw as a side dish with barbecue, fried chicken, or fish.

Conclusion:

Coleslaw is a refreshing and versatile side dish that can be enjoyed all year long. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy side dish, give coleslaw a try.
