2 medium tart apples, cut into 1/2-inch pieces
1 tablespoon lemon juice
1 medium green or sweet red pepper, cut into 1/2-inch pieces
3 boneless skinless chicken breast halves, cooked and cut into 1/2-inch pieces
3-1/2 cups cooked brown rice
1/2 cup chopped pecans, toasted
1/4 cup sliced green onions
1/3 cup vegetable oil
1/4 cup chopped fresh parsley
3 tablespoons raspberry vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
Lettuce leaves, optional

Steps:

  • In a large bowl, toss apples with lemon juice. Add next five ingredients; mix well and set aside. For dressing, whisk together next six ingredients until smooth; pour over salad. Chill until ready to serve. Serve on lettuce leaves if desired.

1/4 cup plus 2 tablespoons extra-virgin olive oil
1/4 cup plus 2 tablespoons apple cider vinegar
Juice of 1 lemon
2 teaspoons Dijon mustard
2 tablespoons grated fresh ginger
Kosher salt and freshly ground black pepper
4 cups Brussels sprouts
1 Granny Smith apple, unpeeled, cored and thinly sliced
1 cup cooked brown basmati rice, at room temperature
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • In a large bowl, whisk together the olive oil, vinegar, lemon juice, mustard and ginger. Season with a pinch of salt and a twist of black pepper.
  • To shave the Brussels sprouts, use a food processor fitted with the slicing blade, a mandoline or a very sharp knife and a steady hand. Add the shaved Brussels sprouts to the bowl with the vinaigrette.
  • To the shaved Brussels sprouts, add the apple, brown rice and parsley and toss together. Taste and add salt and pepper if needed.

1 cup brown rice
¼ cup diced red onion
½ cup diced celery
¼ cup dried cranberries
½ cup balsamic vinaigrette salad dressing
1 tablespoon sugar

  • In a saucepan, bring water to a boil. Stir in rice, cover, and reduce heat to low. Simmer for 45 to 60 minutes, or until done.

1 1/2 cups brown rice
2 1/2 cups water
2 tablespoons unsalted butter, divided
1 teaspoon kosher salt
1 rome apple, cored and cut into 1/4 inch dice
1 pinch ground cloves
2 tablespoons extra virgin olive oil
2 celery ribs, cut into 1/4 inch dice
1 large onion, cut into 1/4 inch dice
1/2 cup dried cranberries
salt and pepper, to taste
4 tablespoons apple cider vinegar
6 tablespoons balsamic vinegar

2 tablespoons water

Steps:

  • For Baked Brown Rice:Preheat the oven to 375 degrees F.Place the rice into an 8-inch square glass baking dish.
  • Bring the water, 1 Tablespoon butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour. At this point, rice can be refrigerated for several days.
  • For the rice dish: Place the rice in a bowl. Melt 1 Tablespoon butter in a medium skillet. Saute the apple with the pinch of cloves until golden and softened a bit.Transfer to the bowl of rice.

1 cup low fat sour cream
1 tablespoon red wine vinegar

1/4 cup farro
Salt to taste
1 large red pepper, roasted and diced
1 cup diced cucumber
2 ounces feta, crumbled or cut in small cubes (plus additional for garnish)
1/4 cup basil leaves, cut in slivers, torn or chopped
1 to 2 teaspoons fresh thyme leaves
2 tablespoons sherry vinegar or red wine vinegar
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
1 small garlic clove, puréed
5 tablespoons extra virgin olive oil
Freshly ground pepper
1/2 6-ounce bag wild arugula, rinsed and dried

  • Cook the rice. Combine with 1 2/3 cups water and salt to taste in a medium saucepan, bring to a boil, cover, reduce the heat and simmer 45 minutes, or until there is no more water in the pot. Turn off the heat, cover the pot with a dishtowel, return the lid, and let sit for 15 minutes. Transfer the rice to a wide bowl or a sheet pan and allow to cool completely.
  • Meanwhile cook the farro. Combine with 3 cups water and salt to taste in a medium saucepan, bring to a boil, cover, reduce the heat and simmer 45 to 50 minutes, until tender. Turn off the heat and allow the farro to sit in the hot water for another 15 minutes, then drain and place in a paper towel-lined bowl to cool.
  • In a large bowl, combine the rice, farro, diced roasted pepper, diced cucumber, feta, basil, and thyme.
  • In a small measuring cup or bowl, whisk together the sherry and balsamic vinegars, salt to taste, Dijon mustard and garlic. Whisk in the olive oil. Pour over the grain mixture, add freshly ground pepper, and toss the mixture well.
  • Line individual salad plates or a platter with arugula. Top with the salad. Garnish, if desired, with more crumbled feta, and serve.
