Brown Sugar Pecan Overnight French Toast Casserole image

Overnight Baked French Toast with a brown sugar and pecan crumble topping.

Provided by Elyse

Yield 10-12

Number Of Ingredients 12

12 slices Texas Toast bread
10 eggs
2 cups milk
2 teaspoons vanilla extract
1/4 cup sugar
2 teaspoons cinnamon
1/2 cup brown sugar
1/2 cup flour
1/2 teaspoon salt
6 Tablespoons butter, softened
3 teaspoons cinnamon
1/2 cup chopped pecans

Steps:

  • Cut bread into 1-inch cubes and place in a 9x13-inch baking pan sprayed with nonstick cooking spray.
  • In a large mixing bowl, whisk together eggs, milk, vanilla, sugar and cinnamon.
  • Pour over bread in prepared pan; set aside.
  • In another bowl, combine brown sugar, flour, salt, butter and cinnamon using a fork or pastry cutter until crumbs begin to form.
  • Sprinkle mixture on top of the bread then top with chopped pecans.
  • Cover and store in fridge overnight.
  • The next morning, preheat oven to 350 degrees F.
  • Bake, uncovered, for 40-45 minutes, or until the center is set and bread is golden brown.
  • Cut into pieces and serve with maple syrup.

Tips:

  • To make the perfect pecan rounds, use cold butter. This will help the dough stay flaky and tender.
  • Work the dough quickly and avoid overworking it. Overworking the dough will make it tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will help the dough hold its shape.
  • When rolling out the dough, use a light touch. Don't press down too hard, or the dough will become tough.
  • Cut the dough into even-sized rounds. This will help them bake evenly.
  • Bake the pecan rounds until they are golden brown. Overbaking will make them dry and crumbly.
  • Let the pecan rounds cool completely before serving. This will help them hold their shape.

Conclusion:

Brown sugar pecan rounds are a delicious and easy-to-make treat that are perfect for any occasion. With their flaky crust, gooey filling, and crunchy pecans, they are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give these brown sugar pecan rounds a try. You won't be disappointed!
