1-1/2 cups unsalted butter, softened
2-1/4 cups packed brown sugar
5 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sour cream
GLAZE:
3 tablespoons unsalted butter
1/4 cup chopped pecans
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
Dash salt
2 to 3 tablespoons half-and-half cream

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with sour cream, beating after each addition just until combined., Transfer to prepared pan. Bake until a toothpick inserted near center comes out clean, 55-65 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely., For glaze, combine butter and pecans in a small saucepan over medium heat, stirring constantly, until butter is light golden brown, 4-5 minutes. Stir into confectioners' sugar. Add vanilla, salt and enough cream to reach a drizzling consistency. Drizzle glaze over cake, allowing some to drip down sides. Let stand until set.

1 cup white sugar
1 ½ cups butter
5 eggs
1 teaspoon vanilla extract
1 cup milk
3 cups all-purpose flour
½ teaspoon baking powder
1 cup chopped pecans

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan. Mix together the flour and baking powder; set aside.

3 About 3 cups of cake cubes
4 eggs
1 3/4 cups of milk
1/2 cup of granulated sugar
whipped cream for topping, or other desired sauce

Steps:

  • Lay your cake pieces on the bottom of a buttered baking dish, fitting them in snuggly next to eachother. Combine 4 eggs, 1 3/4 cups of milk and 1/2 cup of granulated sugar and whisk together. This will be the custard. (you may need a little more milk if you are using more cake). Carefully pour the custard over the cake cubes and press down with a spatula to absorb the liquid. Bake in a 350F oven for about 35 minutes. When ready to serve, cut into pieces and drizzle the warm cake pudding w/ heavy cream (as if the cake-turn-pudding didn't have enough fat & calories).

My DH loves bread pudding and got this recipe from work and wanted me to try it. We love cinnamon so I doubled the cinnamon and decreased the nutmeg. The 9x13" pan made it really thin, the next time I'm going to see if it will fit in an 8x8" pan for a deeper finished recipe. Taste was great!

4 cups bread, torn into bite size pieces
2 cups milk
3 eggs
3 tablespoons butter
1 cup brown sugar
2 teaspoons vanilla
1/2 teaspoon nutmeg
2 teaspoons cinnamon

Steps:

  • In a small pan over low heat, melt butter with brown sugar for 5 minutes stirring occasionally. Set aside.
  • In a large bowl, combine all other ingredients except bread. Mix thoroughly.
  • Combine butter and sugar mixture with egg mixture, stirring constantly.
  • Spray 9x13" pan and cover the bottom with the torn bread.
  • Pour mixture over the bread.

2 teaspoons maple flavored extract
1 cup evaporated milk
3 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
¼ cup butter
½ cup packed brown sugar
1 ½ cups sifted confectioners' sugar
2 tablespoons milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan. Mix together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together 1/2 cup butter and 2 cups brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the maple flavoring. Beat in the flour mixture alternately with the evaporated milk, mixing just until incorporated. Pour batter into prepared pan.

1 cup shortening
1/2 cup butter, softened
1 (1 lb) box light brown sugar
5 large eggs
3 cups all-purpose flour
1/2 teaspoon salt

1 teaspoon maple flavoring or 1 teaspoon vanilla extract
1/2 cup butter
1 cup light brown sugar, firmly packed
3/4 cup evaporated milk
3 cups powdered sugar, sifted

Steps:

  • Beat shortening,butter and brown sugar at medium speed with an electric mixer 2 minutes or until creamy. Add eggs, one at a time, beating well after each addtion.

  • Melt butter in a medium saucepan over medium heat. Whisk in brown sugar, and cook 1 minute.
  • Add milk, powdered sugar, and vanilla; whisk until creamy. Remove from heat, and pour immediately over cooled cake.

1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
1 1/2 cups plus 2 tablespoons all-purpose flour, plus more for pan
4 large eggs, room temperature
1 cup packed light-brown sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 375 degrees. Butter and lightly flour a 9-by-4 1/2-by-2 3/4-inch loaf pan; set aside. Whisk eggs together in a bowl; set aside.
