1 tablespoon habanero powder
2 teaspoons coarsely ground black pepper, plus more for seasoning
2 teaspoons dried thyme
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
3 pounds chicken wings, split at the joint, wing tips removed and discarded
Chopped cilantro leaves, about 2 tablespoons
Chimichurri Sauce, recipe follows
1 cup fresh cilantro leaves
1 cup fresh flat-leaf parsley
1/2 cup fresh mint leaves
1 clove garlic

  • Stir together the coriander, ginger, sugar, onion and garlic powders, salt, habanero powder, black pepper, thyme, cinnamon, allspice, and cloves in a large bowl. Season the wings with salt and pepper and toss them in the jerk rub. Add the wings, in batches, to the oil and cook until golden brown and cooked through, 8 to 10 minutes. Remove them with a slotted spoon and put them on a plate lined with paper towels to drain for a few minutes, and then transfer the wings to a large bowl.
  • Add the brown sugar-rum glaze and chopped cilantro and toss to coat each wing. Serve with the Chimichurri Sauce.
  • Combine the cilantro, parsley, mint, garlic, and vinegar in a food processor and pulse until coarsely chopped. With the motor running, slowly add the oil through the feed tube until smooth. Add salt and pepper, to taste, and pulse a few times until combined.

BROWN SUGAR RUM GLAZE

Brown Sugar Rum Glaze image

I found this recipe during the Christmas 2009 season in a local newspaper. I haven't tried it myself yet but it looks delicious. The recipe says it is a great glaze for rum cake but I bet it would be fabulous over vanilla pound cake too.

Time 15m

Yield 1 9" bundt cake

Number Of Ingredients 5

3 tablespoons butter
3 tablespoons brown sugar
3 tablespoons dark rum
2 cups icing or 2 cups confectioners' sugar
1 tablespoon evaporated milk

Steps:

  • In a small pan melt 3 tablespoons butter and 3 tablespoons of brown sugar.
  • Cook 5-8 minutes until bubbly and brown.
  • Add 3 tablespoons dark rum and whisk for about 1 minute.
  • Remove from heat, add 2 cups sifted icing/confectioners' sugar and 1 tablespoons evaporated milk.
  • Pour over cake.

Tips for Making the Perfect Brown Sugar Rum Glaze:

  • Use dark rum. Dark rum has a richer flavor than light rum, which will give your glaze more depth of flavor.
  • Don't skimp on the brown sugar. Brown sugar is what gives the glaze its signature flavor and texture. Use a light brown sugar for a milder flavor, or a dark brown sugar for a more robust flavor.
  • Add a little spice. A pinch of cinnamon, nutmeg, or ginger can add a warm, festive flavor to your glaze.
  • Let the glaze simmer. Simmering the glaze will help it to thicken and develop its flavor. Be sure to stir it occasionally to prevent it from burning.
  • Glaze your food while it's still hot. This will help the glaze to adhere to the food and create a shiny, caramelized crust.

Conclusion:

Brown sugar rum glaze is a versatile and delicious glaze that can be used on a variety of foods, from ham and chicken to pork and vegetables. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a glaze that will add a touch of sweetness and flavor to your food, give brown sugar rum glaze a try. You won't be disappointed!
