CHEESY EGG POTATO AND HAM FRITTATA BRUNCH CASSEROLE
This makes a wonderful weekend brunch, I have made it many time in the past, it's very easy to make too! You can make this using cold cooked finely diced potatoes in place of hash browns, I have made this using leftover potatoes with great success! Feel free to add in green bell pepper, jalapeno peppers, skiced mushrooms, or whatever you wish! The skillet cooking time will take slightly longer.

Tips:
- Use a variety of potatoes: This will give your casserole a more complex flavor and texture. Try using a combination of russet potatoes, Yukon Gold potatoes, and/or red potatoes.
- Don't overcook the potatoes: They should be tender but still slightly firm. Overcooked potatoes will become mushy and watery.
- Use a sharp knife to slice the potatoes: This will help to ensure that the potatoes are evenly sliced and cook evenly.
- Layer the potatoes in a greased baking dish: This will help to prevent them from sticking together.
- Season the potatoes liberally: Use a combination of salt, pepper, garlic powder, onion powder, and paprika. You can also add other herbs and spices to taste.
- Top the potatoes with a creamy sauce: This will help to keep the casserole moist and flavorful. You can use a simple béchamel sauce or a more flavorful sauce made with cheese, bacon, or vegetables.
- Bake the casserole until the potatoes are tender and the sauce is bubbly: This usually takes about 45 minutes to 1 hour.
- Let the casserole cool slightly before serving: This will help to prevent the casserole from falling apart.
Conclusion:
Potato casserole is a versatile and delicious dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be tailored to your own taste preferences. With so many different recipes to choose from, you're sure to find a potato casserole that you'll love.
