BROILED COCONUT TOPPING

Broiled Coconut Topping image

My husband does not like the gooey icing of German Chocolate cake, so I found this pretty slick alternative! It has all the flavors, but a very distinct "crunch", it almost caramelizes on top of the cake. Try it, I think you will be pleasantly surprised! I do not use the nuts as my husband does not like nuts in his cakes, only cookies! This is perfect for a 13x9 cake, I often use a Swiss Chocolate cake mix.

Tips:

  • Use room temperature ingredients: This helps ensure that your cake batter mixes evenly and your cake bakes evenly.
  • Don't overmix your batter: Overmixing can result in a tough, dense cake. Mix just until the ingredients are combined.
  • Bake your cake in a preheated oven: This helps ensure that your cake bakes evenly.
  • Don't open the oven door while your cake is baking: This can cause your cake to fall.
  • Let your cake cool completely before frosting it: This helps prevent the frosting from melting.
  • To make the broiled coconut topping: Use unsweetened coconut flakes. Sweetened coconut flakes will burn easily under the broiler.

Conclusion:

This Busy Day Cake with Broiled Coconut Topping is a delicious and easy-to-make cake that is perfect for any occasion. The cake is moist and fluffy, with a sweet and nutty coconut topping. It's a great cake to serve for breakfast, lunch, or dinner, and it's also a great way to use up any leftover coconut flakes you may have on hand.
