1 (15 ounce) can butter beans, drained
1 small onion, chopped
1 tablespoon finely chopped jalapeno pepper
6 saltine crackers, crushed
1 egg, beaten
½ cup shredded Cheddar cheese
¼ teaspoon garlic powder
salt and pepper to taste
¼ cup vegetable oil

Steps:

  • In a medium bowl, mash butter beans. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt, and pepper. Divide into 4 equal parts, and shape into patties.

1 egg, beaten
10 round buttery crackers, crushed (1/3 cup)
2 tablespoons chili sauce
2 tablespoons finely chopped onion
1 cup frozen mixed vegetables (from 1-lb bag)
1/4 cup raisins
1/4 teaspoon ground cumin
1 can (14 1/2 oz) Mexican-style stewed tomatoes with jalapeño peppers, garlic and onion, undrained

Steps:

  • In medium bowl, mash beans with fork. Stir in remaining patty ingredients. Shape mixture into 4 patties, about 1/2 inch thick.
