Last summer, I gave up going abroad and took a staycation in Cornwall. Apart from one gorgeous, glinting day, it rained and blustered and blew, and I loved it. There I was, with a fire burning inside, the mackerel-coloured sea swirling outside, living off the fat, that's to say, the clotted cream of the land. If you can't find clotted cream (sometimes called Devonshire cream) then feel free to lavishly spoon softly heavy whipped cream onto the scones instead. The buttermilk in these scones only gives them a slight tang, all the better to enjoy the jam and cream on top, but is also what yields such a melting, tender crumb. These scones do look a bit like they are suffering from cellulite (though I dare say we all might, if we ate too many of them), but proper scones should not have the smooth-sided denseness of the store-bought variety. And they are so worth making. Until you have made a batch of scones you won't have any idea how easy they are to throw together. Frankly, it shouldn't take longer than 20 minutes to make and bake them, from start to finish. Even though the process is hardly lengthy enough to warrant cooking them in advance, I like to make up quite a big batch - and this recipe will give you about 18 scones - and freeze some (they thaw incredibly quickly) to produce a near-instant cream tea at some future date.

  • Freeze Note: Baked scones can be frozen in airtight containers or resealable bags for up to one month. Thaw for 1 hour at room temperature and warm as above. Steps:

  • In a large bowl, combine the flour, sugar and baking powder. Cut in butter until mixture is crumbly; stir in buttermilk just until blended. Stir in chocolate chips; , Turn dough onto a floured surface; knead gently 8-10 times. Pat into a 9-in. circle. Cut with a floured 2-in. biscuit cutter. Place 1 in. apart on greased baking sheets. , Bake at 450° for 8-10 minutes or until golden brown. Remove to wire racks., In a small bowl, combine glaze ingredients until smooth. Drizzle over scones. Serve warm.

Steel cut oats are my new passion. I haven't tried this recipe yet, but will shortly. It comes from Bob's Red Mill, an excellent brand of healthy grains, etc. The recipe seems a tad fussy, but my mouth waters just thinking about the yummy (and healthy) end result.

1 cup steel cut oats
1 cup buttermilk, at room temperature
1/2 cup oat flour
1/2 cup whole wheat flour
1/4 cup unbleached white flour
1 teaspoon baking soda
1 teaspoon sugar
2 teaspoons baking powder
1/2 teaspoon salt (to taste)
1/3 cup dried currant
butter (for greasing baking sheet)
4 tablespoons butter, softened and cut into small pieces
1 tablespoon milk
cinnamon-sugar mixture, for topping

Steps:

  • Preheat oven to 350F degrees.
  • Place the oats in a pie pan and toast them for 20 minutes, stirring often to toast evenly and not burn.
  • Remove when slightly golden.
  • Combine oats with buttermilk in a small bowl and let stand for 20 minutes.
  • In a large bowl, combine the flours, baking soda, sugar, baking powder, salt and dried currants.
  • Reset the oven to 400F degrees.
  • Butter a baking sheet.
  • Using a pastry blender, cut the 4 tablespoons butter into the flour until the texture is coarsely crumbled.
  • Stir in the buttermilk/oat mixture until combined.
  • Flour your hands and scoop up the dough, forming it into a ball. Do not overmix.
  • Press the ball of dough directly into the pan, then press into a 3/4" thick circle.
  • With a sharp knife, score the surface, almost to the bottom, making eight wedges.
  • Brush the surface with milk and sprinkle a bit of sugar and cinnamon on top.
  • Bake for 12 to 15 minutes.
  • Cut into wedges.

8 ounces self-raising flour (preferably self-raising soda bread flour)
1 pinch salt
1 ounce butter or 1 ounce hard margarine
1 egg, beaten
5 fluid ounces buttermilk
eggs or milk, to glaze
cinnamon sugar, to dust
1 teaspoon dry mustard
2 ounces cheese, grated
2 tablespoons fresh herbs, chopped (basil or whatever you like)

Steps:

  • Preheat oven to 450°F (gas mark 8).
  • Sift flour with salt and rub in butter or margarine.
  • For Cheese& Herb Scones add mustard, cheese and herbs to the dry ingredients at this point.
  • Make a well in the centre and pour in the egg and most of the buttermilk.
  • Mix quickly to form a soft dough, adding a little extra buttermilk if necessary.
  • Turn out onto a floured surface and roll out lightly until 1" thick.
  • Working quickly, cut into 2" rounds.
  • Glaze with egg or milk and set on a floured baking sheet.
  • Before baking, dust scones with cinnamon sugar for Buttermilk Scones or sprinkle a little grated cheese on top of each scone for Cheese& Herb Scones.
  • Bake for 15-20 minutes until light brown.

  • Preheat oven to 400°F. In a large bowl, stir together all-purpose flour, whole wheat flour, sugar, baking powder, ground ginger, baking soda, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of the flour mixture.
  • In a small bowl, combine egg product and the 1/3 cup buttermilk; stir in dried cranberries. Add the buttermilk mixture all at once to the flour mixture. Using a fork, stir just until moistened (some of the dough may look dry).

I love tea biscuits and scones and am always on the lookout for something a little different. These savory scones are too die for, they are so good. The flavor, crumb and texture are perfect. This is a great use for leftover mashed potatoes and you only need a 1/2 cup of them. Try them and see for yourself, you will not be disappointed. Update 4/30/15: I just made these again I can't believe that they taste as good as they did the first time. The potatoes and shallots really add an extra depth of flavor to the biscuits. 2 shallots, thinly sliced
1 tablespoon butter
1 1/2 cups flour
2 teaspoons baking powder
