RADISH SANDWICHES WITH BUTTER AND SALT

Radish Sandwiches With Butter and Salt image

Steven Satterfield, the chef at Miller Union in Atlanta, included this very French picnic recipe in his cookbook, "Root to Leaf." As he points out, the key is to use a lot of butter, a lot of radishes and plenty of salt. The recipe yields four sturdy desk- or school-lunch sandwiches, or you can divide them further, into a dozen little bites for hors d'oeuvres.

  • Serve as is, cut into small sandwiches for hors d'oeuvres, or wrap for lunch.

Tips:

  • Choose the right radishes: Select fresh, crisp radishes with bright red exteriors and no blemishes. Smaller radishes tend to be more tender and flavorful.
  • Wash and trim the radishes: Rinse the radishes thoroughly under cold water. Trim the tops and tails, leaving about 1/4 inch of stem attached.
  • Slice the radishes thinly: Use a sharp knife or mandoline to slice the radishes into thin, even slices. This will help them cook evenly and absorb the butter and herbs.
  • Sauté the radishes until tender: Heat a large skillet over medium heat. Add the butter and radishes and cook, stirring occasionally, until the radishes are tender and slightly browned, about 5-7 minutes.
  • Season the radishes: Once the radishes are tender, season them with salt, pepper, and any other desired herbs or spices. Common additions include garlic, thyme, rosemary, and red pepper flakes.
  • Serve the radishes immediately: Buttery radishes are best served immediately, while they are still warm and tender. They can be enjoyed on their own as a side dish or used as a topping for salads, sandwiches, or grilled meats.

Conclusion:

Buttery radishes are a delicious and versatile side dish that can be prepared in just a few minutes. With their slightly sweet and peppery flavor, they are a great way to add a pop of color and flavor to any meal. Whether you serve them on their own, as a topping for salads or sandwiches, or as a garnish for grilled meats, buttery radishes are sure to be a hit. So next time you're looking for a quick and easy side dish, give this recipe a try!
