I created this recipe to use up a bumper crop of zucchini and to get my kids to eat more fruits and veggies without them knowing it. It is a dense cake reminiscent of carrot cake. I frequently add in an extra cup of stir-ins. Raisins, flake coconut, and walnuts or pecans are favorites.

3 cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon baking powder

½ teaspoon salt
4 eggs
1 cup unsweetened applesauce
¾ cup vegetable oil

Steps:

1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.

1 1/2 cups sugar
3 eggs
1/2 cup Greek yogurt, plain (or sour cream)
1/4 teaspoon baking soda
1/4 cup orange juice
2 1/2 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground mace
1 1/2 cups sugar
1 cup water
1 cup honey

Steps:

  • Preheat oven to 350°F Grease a 9 x 13 inch baking pan.
  • Beat oil and sugar together. Add eggs and half of the yogurt. Mix well.
