Steps:
- Wash rice thoroughly. In a medium saucepan, combine 2 cups rice and 4 cups water. Bring to boil; reduce heat, cover and simmer for 20 minutes or until all of the water is absorbed.
- In the meantime, remove the core from the cabbages using a thin, long knife. Place 1 cabbage in a microwave proof container with a lid with core side down. Pour 1/2 cup water into the container with the cabbage, cover and microwave on HIGH (full power) for 10 minutes. Carefully turn cabbage over and cook covered for an additional 10 minutes. When cabbage is cooked, let sit until it is cool enough to handle. Separate leaves carefully, removing any tough ribs. Cook the second cabbage in the same manner.
- Divide chopped onions in half. Saute one half of the onions in 3 tablespoons butter; cook just until translucent (do not brown). In a large mixing bowl, mix together both the cooked and uncooked rice, cooked and uncooked onions, ground beef, pork sausage, garlic, dill weed, salt, black pepper and sugar and mix well to blend.
- Spoon about 2 tablespoons of mixture onto each cabbage leaf. Bring one end of cabbage leaf over mixture, roll and tuck ends in to prevent any filling from falling out.
- Preheat oven to 350 degrees F (175 degrees C). Prepare two 9x13 inch casserole dishes by placing some left over cabbage leaves in bottom of each. Arrange cabbage rolls in a single layer tight against each other.
- In a food processor or blender, process condensed tomato soup and tomatoes. Pour tomato mixture over the cabbage rolls until just covered. Place 4 bay leaves on top of sauce in each dish. Cover each dish tightly with aluminum foil.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 2 hours. Once cooked, remove the dishes from the oven and let cool for 15 minutes before removing aluminum foil. Serve hot.

BEEF AND BARLEY CABBAGE ROLLS
This is a good recipe for those who don't want traditional tomato sauce rolls. This recipe is courtesy of Germaine Storz, taken from the Food Network. Absolutely delicious! *Lamb can be used instead of beef. If you do this-- use tarragon instead of oregano. White or brown rice may be substituted for barley.

Tips:
- Choose the right cabbage: Look for a large, firm head of cabbage with tightly packed leaves. Remove the outer leaves and use them for another purpose, such as making coleslaw.
- Parboil the cabbage leaves: This will make them more pliable and easier to roll. Bring a large pot of salted water to a boil and blanch the cabbage leaves for 2-3 minutes, or until they are slightly wilted. Remove the leaves from the boiling water and place them in a colander to drain.
- Use a lean ground beef: This will help to prevent the cabbage rolls from becoming greasy. You can also use ground turkey or chicken if you prefer.
- Season the beef mixture well: Use a variety of spices and herbs to flavor the beef mixture, such as garlic powder, onion powder, paprika, salt, and pepper. You can also add some chopped vegetables, such as carrots, celery, or onions.
- Roll the cabbage rolls tightly: This will help to keep the filling inside the rolls and prevent them from falling apart during cooking. Tuck the sides of the cabbage leaves in as you roll them up.
- Cook the cabbage rolls in a flavorful sauce: You can use a variety of sauces to cook the cabbage rolls, such as tomato sauce, beef broth, or vegetable broth. Add some chopped vegetables, such as carrots, celery, or onions, to the sauce for extra flavor.
- Serve the cabbage rolls with your favorite sides: Cabbage rolls can be served with a variety of sides, such as mashed potatoes, rice, or roasted vegetables.
Conclusion:
Cabbage rolls are a delicious and versatile dish that can be made with a variety of fillings and sauces. They are a great way to use up leftover cabbage and ground beef, and they can be made ahead of time and frozen for later. With a little planning and effort, you can make cabbage rolls that are sure to impress your family and friends.
