Yield 5 cups, 6-8 serving(s)

Number Of Ingredients 11

1 lb green cabbage, shredded fine (about 1/2 medium head)
1 teaspoon table salt
2 tablespoons lime juice
1 teaspoon grated lime zest (from 1 lime)
2 tablespoons olive oil
1 tablespoon rice vinegar (or sherry vinegar)
1 tablespoon honey
1 teaspoon ground cumin
1 pinch cayenne pepper
1 red bell pepper, seeded and cut into thin strips
table salt

Steps:

  • Toss shredded cabbage and 1 teaspoon salt in a colander or large mesh strainer set over a medium bowl. Let stand until the cabbage wilts, at least 1 hour or up to 4 hours. Rinse cabbage under cold running water (or in large bowl of ice water if serving immediately). Press, but do not squeeze, to drain; pat dry with paper towels. (Can be stored in zipper-lock bag and refrigerated overnight.).
  • Stir together lime juice, zest, oil, vinegar, honey, cumin, and cayenne in medium bowl. Toss cabbage and red pepper in dressing. Season to taste with salt; cover and refrigerate until ready to serve.

Tips:

  • Use a sharp knife to thinly slice the cabbage and red pepper. This will help the vegetables absorb the dressing more easily.
  • If you don't have a mandoline, you can use a sharp knife to thinly slice the cabbage and red pepper. Just be careful to slice them evenly so that they cook evenly.
  • You can use any type of vinegar in the dressing, but a citrus vinegar, such as lime or lemon vinegar, will give the salad a brighter, more refreshing flavor.
  • If you don't have any fresh cilantro, you can use dried cilantro instead. Just be sure to use half the amount of dried cilantro as you would fresh cilantro.
  • This salad is best served fresh, but it will keep in the refrigerator for up to 2 days.

Conclusion:

Cabbage and Red Pepper Salad with Lime-Cumin Vinaigrette is a delicious, healthy, and refreshing salad that is perfect for a summer meal. The cabbage and red pepper are tossed in a tangy lime-cumin vinaigrette, and the salad is topped with fresh cilantro. This salad is a great way to get your daily dose of vegetables, and it is also a great side dish for grilled chicken or fish.
