2 (4 ounce) links hot Italian sausage, casings removed
2 quarts chicken broth
1 (14 ounce) can crushed tomatoes
½ (8.5 ounce) package coleslaw mix
3 stalks celery, sliced
2 large potatoes, diced
2 large carrots, sliced
½ large onion, diced
2 cloves garlic, crushed
3 bay leaves
salt and ground black pepper to taste
½ cup heavy whipping cream, or to taste

Steps:

  • Heat a stock pot over medium heat. Crumble sausage into the pot; cook and stir until completely browned, 5 to 7 minutes.
  • Pour chicken broth into the pot; add tomatoes, coleslaw mix, celery, potatoes, carrots, onion, garlic, bay leaves, salt, and pepper. Bring the liquid to a boil, reduce heat to medium low, and simmer until vegetables are tender, 45 minutes to 1 hour. Stir cream into individual servings.

1 pound elk breakfast sausage
2 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons minced fresh ginger root
1 onion, chopped
2 cups cubed butternut squash
2 beets, sliced into rounds
4 red potatoes, diced
4 carrots, chopped
½ medium head green cabbage, chopped
1 teaspoon hot pepper sauce (such as Tabasco®), or to taste
2 teaspoons dried dill weed
2 teaspoons dried rubbed sage
2 teaspoons dried thyme leaves
salt and black pepper to taste
2 quarts chicken broth
1 (10.75 ounce) can condensed cream of mushroom soup
¼ cup red wine vinegar

Steps:

  • Heat a large pot over medium-high heat. Cook and stir the sausage in the hot pot until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease; reserve the browned sausage.

I wanted a simple figure friendly soup so I came up with this. It has plently of flavor with not many calories. Is sure doesn't hurt that it warms you from head to toe. Taste even better the next day!!

4 cups cabbage
4 cups chicken broth
1 (14 ounce) can diced tomatoes
1 large onion
1 green pepper
4 stalks celery & leaves
1 -2 tablespoon Worcestershire sauce
1 -2 teaspoon oregano
1 teaspoon thyme
2 garlic cloves
salt & pepper
parmesan cheese

Steps:

  • Cut cabbage into 1" pieces, dice onion, green pepper, celery & garlic.
