CABBAGE WEDGES WITH CHEESE SAUCE

Cabbage Wedges With Cheese Sauce image

We celebrate St Patrick's Day with a big meal each year and cabbage usually plays some part in the feast. One year, a guest brought this cabbage dish to share and it was a big hit. She originally found the recipe in an issue of Taste of Home magazine. The chili sauce called for in this recipe is not particularly spicy (although hot versions are also sold) and is usually sold in a bottle in the ketchup aisle in US supermarkets. The brand I most often have used is Heinz.

Tips:

  • Choose the Right Cabbage: Select a firm, dense cabbage with tightly packed leaves. Avoid heads with signs of wilting, bruising, or discoloration.
  • Shred the Cabbage Evenly: Use a sharp knife or a mandoline to shred the cabbage into thin, uniform strips. This will ensure even cooking and a pleasant texture.
  • Prepare a Flavorful Cheese Sauce: The cheese sauce is a crucial component of this dish, so make sure to use good quality cheese and seasonings. Experiment with different types of cheese to find a combination that suits your taste.
  • Cook the Cabbage until Tender: Depending on the method you choose (boiling, steaming, or microwaving), cook the cabbage until it reaches your desired tenderness. Overcooking can make the cabbage mushy, so keep an eye on it during the cooking process.
  • Garnish with Fresh Herbs: Before serving, sprinkle some freshly chopped herbs like parsley, chives, or dill over the cabbage. This will add a pop of color and enhance the overall flavor.

Conclusion:

Cabbage with Cheese Sauce is a versatile and comforting dish that can be enjoyed as a side or a main course. With its simple ingredients and easy preparation, it's a perfect meal for busy weeknights or casual gatherings. Experiment with different variations, such as adding bacon, sausage, or vegetables to the cabbage, or using different types of cheese in the sauce. This recipe is a testament to the versatility and affordability of cabbage, and it's sure to become a family favorite.
