MAMA'S TOMATO GRAVY

Mama's Tomato Gravy image

This dish is truly a taste of Louisiana Cajun Country. I mean where folks are already sitting at the table drinking coffee and eating breakfast by the time the rooster crows. Mama made countless batches of biscuits and tomato gravy in her lifetime. I'm sure she learned to make this from her mother: Carmen Inez Shirley. This is the dish that puts my feet back under my mama's table. Serve with love over hot buttermilk biscuits along with bacon or sausage for breakfast, brunch, lunch or dinner.

½ cup cooked turkey, cut into small cubes

Tips:

  • Use ripe tomatoes. The riper the tomatoes, the sweeter and more flavorful the gravy will be.
  • Roast the tomatoes. Roasting the tomatoes intensifies their flavor and gives the gravy a smoky depth of flavor.
  • Use a good quality olive oil. Olive oil adds a rich, fruity flavor to the gravy.
  • Don't overcrowd the pan. If you overcrowd the pan, the tomatoes will steam instead of roast.
  • Season the gravy to taste. Add salt, pepper, and other spices to taste.
  • Serve the gravy over your favorite pasta or rice. You can also use it as a dipping sauce for bread or vegetables.

Conclusion:

Cajun tomato gravy is a versatile and flavorful sauce that can be used in a variety of dishes. It's easy to make and can be tailored to your own taste preferences. Whether you like it spicy or mild, Cajun tomato gravy is sure to please everyone at your table.
