2 tablespoons olive oil
1 onion, minced
8 cloves garlic, minced
2 Spanish chorizo links, sliced
2 thick slices smoked ham, diced, or more to taste
3 potatoes, peeled and diced
2 turnips, peeled and diced
8 cups chicken stock
1 (15 ounce) can white cannellini beans
3 cups chopped turnip greens

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 10 minutes. Add garlic; cook and stir until fragrant, about 2 minutes.
  • Stir chorizo and ham into onion mixture and cook until lightly browned, 3 to 4 minutes. Mix potatoes and turnips into chorizo mixture; pour in chicken stock. Bring stock to a boil, reduce heat to medium-low, cover stockpot, and simmer until potatoes and turnips are tender, about 20 minutes.
  • Increase heat to medium and stir cannellini beans and turnip greens into soup; cook until greens are desired tenderness, at least 3 minutes.

5 pounds chicken leg quarters
2 gallons water
2 tablespoons minced garlic
2 tablespoons salt
1 tablespoon garlic powder
1 cube chicken bouillon
4 large carrots, peeled and cut into large chunks
4 large potatoes, peeled and cut into large chunks
4 zucchini, cut into large chunks
1 chayote, cut into large chunks
1 large white onion, cut into large chunks
½ bunch fresh cilantro, chopped

Steps:

  • Place chicken legs into a large stock pot and pour water over chicken; add garlic, salt, and garlic powder. Cover, bring to a boil, and reduce heat to low. Simmer until chicken meat falls off the bones, 1 to 2 hours. Stir in chicken bouillon cube and let dissolve.
  • Mix carrots, potatoes, zucchini, chayote, and white onion in the broth, turn heat to medium-low, and cook soup at a low boil until carrots and potatoes are tender, 45 minutes to 1 hour. Stir chopped cilantro into soup, simmer for 5 minutes, and serve.

In Mexican homes, cooks traditionally use white mushrooms for this soup, but it is also delicious with other varieties or a combination of mushrooms. 2 lbs mushrooms (any kind or a mixture of kinds)
1/4 cup olive oil
1 medium white onion, peeled and minced
2 garlic cloves, peeled and minced
2 jalapenos, seeded and chopped (or to taste)
1 cup Huitlacoche (canned is fine)
6 cups water (canned is fine) or 6 cups chicken broth (canned is fine)
1/4 cup fresh epazote leaves or 1/4 cup cilantro

Steps:

  • Clean mushrooms.
  • Cut and discard the stem of each mushroom, slice caps in half lengthwise, and finely slice halves.
  • In large stockpot, heat olive oil, and sauté onion 2 minutes.
  • Add garlic, sauté for a few seconds.
  • Add jalapeños, sliced mushrooms and huitlacoche.
  • Cover pot, reduce heat to low and let vegetables cook for about ten minutes, or until soft.
  • Add water or broth, season with salt, bring to boil, add chopped epazote or cilantro, and serve immediately.

You can decrease the amount of jalapeno if you'd prefer it to be a bit milder (or remove the seeds and ribs from the jalapenos). I received this from a friend at my bridal shower. This is the basic recipe, but you could always add more to the soup if you wanted to make it heartier or use it as an entree - another 1 lb of mushrooms works well, or some shredded chicken, beans, etc.

1 lb mushroom, finely sliced
1 large onion, finely chopped

1 bunch cilantro, leaves and fine stems
8 scallions
1 yellow onion, skin removed, halved pole to pole
5 to 6 medium cloves garlic, lightly smashed
1 teaspoon whole cumin seeds
3 to 4 pounds beef short ribs, oxtail or beef shins
Salt
1 pound firm, nonstarchy potatoes, such as red bliss or Yukon Gold

Steps:

  • Reserve a small handful of cilantro and 5 scallions. To a large stockpot or Dutch oven, add the split onion, the garlic cloves, the cumin seeds and the beef. Cover with water by 2 inches (3 to 4 quarts total).
  • Bring to a simmer over high heat, then reduce heat to maintain a very bare simmer. Using a ladle, skim off and discard any solid scum that has collected on the surface. Roughly chop the remaining cilantro and scallions, and add them to the pot. Cover and cook until the beef is tender and a skewer or knife shows no resistance when poked through the meat, 2½ to 3 hours.
  • Using tongs or a skimmer, remove the meat with the bones to a large plate and set aside.
  • Set a fine mesh strainer in a large bowl and strain the broth. Discard the solids. Scrub out the pot, then return the broth to it and season to taste with salt. (It should taste quite salty.) Proceed immediately to the next step, or return the beef to the broth and refrigerate in sealed containers for up to a week before continuing (or adapting into one of the alternate serving methods, see Note).
  • Peel the potatoes, halve or quarter them lengthwise, then cut crosswise into ⅓- to ½-inch-thick slices and add them to the broth. Simmer the potato slices in the broth until tender, 10 to 12 minutes. Return the beef to the broth.
  • Roughly chop the reserved cilantro and scallions, and add to the broth. Serve immediately.
