LOUISIANA SHRIMP BAKE
This is kinda like etouffee..sort of. I thought it was delish sounding when I heard about it. I have tweaked it a bit from the original, since I hate hard-boiled eggs and didn't have any cooking sherry. I replaced the sherry with some Old Bay (which I have just discovered in '05) and didn't replace those nasty eggs with anything. The recipe calls for a pound of tomatoes. Since I usually make this in the fall/winter, I use DM's home-canned tomatoes in some juice. I really like this - some Southern comfort food at its best.

Steps:
- To prepare the tortillas, wrap loosely in a damp kitchen towel and place in a preheated 250 degree oven.
- Heat the vegetable oil over medium-high heat in a large (12-inch), non-stick skillet. When the oil is hot, add the entire package of Simply Potatoes Diced Potato with Onion; spread out evenly. Cover and cook the potatoes for 10 minutes, stirring every 2-3 minutes, ensuring that the potatoes are browning evenly.
- While the potatoes are cooking, combine the sour cream, about ½ of the taco seasoning, 2 tablespoons lime juice, half of the chopped cilantro and the salt in a blender or food processor. Process until smooth and set aside.
- Toss the remaining taco seasoning and ground cumin with the shrimp. After the potatoes have been cooking for 10 minutes and are nice and brown, add the seasoned shrimp, green onions and the remaining chopped cilantro and stir gently. Continue cooking the potato-shrimp mixture for an additional 3-5 minutes, uncovered, stirring occasionally, or until the shrimp is cooked through.
- Assemble the tacos by topping each warm tortilla with some of the shrimp and potato mixture, a pinch of the spinach, some tomato and avocado, a few crumbles of goat cheese and a drizzle of the cilantro crema. Enjoy!

Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor of your shrimp bake. Buying shrimp that is already peeled and deveined will save you time and effort.
- Don't overcook your shrimp. Shrimp cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and rubbery.
- Add vegetables to your shrimp bake. This will add flavor and texture to the dish. Vegetables such as corn, potatoes, carrots, and zucchini work well in a shrimp bake.
- Season your shrimp bake generously. Use a combination of herbs and spices to create a flavorful dish. Garlic, paprika, and lemon pepper are all good options.
- Serve your shrimp bake with a dipping sauce. This will add extra flavor and moisture to the dish. A simple butter sauce or a creamy dill sauce are both good choices.
Conclusion:

With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that your family and friends will love.
