Time 40m

Yield 10 to 12 servings

Number Of Ingredients 10

1 stick unsalted butter, plus more for greasing the pan
1 bag good-quality semisweet chocolate chips
2 cups heavy cream
3 tablespoons instant espresso
1 teaspoon ancho chile powder
1 bag mini marshmallows, 1 cup set aside
1 tablespoon vanilla paste
7 cups popped popcorn
2 teaspoons smoked sea salt
2 sleeves honey graham crackers, 2 sheets set aside

Steps:

  • Butter a 9- by 11-inch pan.
  • Place the chocolate in a large bowl over a double boiler at a low simmer. Stir the chocolate until melted, and then turn off the heat. In a separate pot, bring the cream just to a simmer. Stir in the espresso and chile powder, and then remove from the heat. Add the cream mixture to the chocolate and whisk into a smooth, shiny consistency. Refrigerate.
  • Melt the butter in a large pot over low heat. Stir in the marshmallows and cook until fully melted. Add the vanilla paste and popped popcorn, coating thoroughly.
  • Press half of the popcorn mix into the prepared pan. Sprinkle with half of the salt and the chocolate mixture. Spread the remaining popcorn mix on top, sprinkling with the rest of the salt. Refrigerate until set.
  • Once cool enough to easily handle, cut first into rectangles and then into triangles. Let sit at room temperature until slightly tacky.
  • Crush 2 sheets of the graham crackers in a shallow dish. Place the triangles into the crumbs and press the crumbs into the bottom and sides. Place the triangles on a baking sheet and top with a few remaining marshmallows. Put under the broiler until light brown. Top with larger piece of graham for garnish.

CAMPFIRE S'MORES (AKA ROBINSON CRUSOES)

Campfire S'mores (Aka Robinson Crusoes) image

If you like regular S'mores, you're going to LOVE these! Start with chocolate graham crackers, smear on some creamy peanut butter, add the chocolate candy pieces, the melty marshmallow; then top with the other square of graham cracker. THE TRICK to making these perfectly is being patient while the marshmallow is roasting....don't stick it into the fire, twirl it slowly over the warmth, so that it starts to swell up. That's your signal that the inside is getting all soft and smooshy--just right for perfect s'mores. I first made these back in the early 90's when taking 10 girls on a church youth camp-out in eastern Washington State. We cooked all our meals over the open-fire (no campstove!!) including chocolate chip pancakes MADE FROM SCRATCH, pioneer hotdogs (yum, yum!) and caramel apples roasted in the coals. I guess I need to post those recipes too. After all...it's summer-time and people are camping!!!

Time 2m

Yield 1 s'more, 1 serving(s)

Number Of Ingredients 7

1 chocolate graham cracker (broken in half the short way)
1 tablespoon creamy peanut butter
1 piece Hershey chocolate candy bar, 1 quarter piece
1 marshmallows
2 fudge-striped shortbread cookies
2 other kind cookies
2 cinnamon graham crackers

Steps:

  • Break cracker in half (the short way); set one aside for the top.
  • Spread peanut butter on one cracker, set the candy piece on that and press gently.
  • Roast the marshmallow over the WARMTH of a campfire (do NOT burn--it will not achieve the proper squishiness required for a PROPER s'more). Watch for the 'shmallow to swell up and get puffy looking.
  • While still on the roasting stick, lay marshmallow on top of the chocolate, use the reserved cracker to hold the 'shmallow; pull the stick out, pressing down with the cracker.
  • Viola! If you roasted the marshmallow properly, there should be a bit oozing out around the edges.
  • OPTIONS: Instead of chocolate grahams, you can use regular ones or cinnamon/sugar ones. OR try fudge-stripe cookies or chocolate chip or even GINGERsnaps!
  • ALTERNATIVE COOKING METHOD: Prepare everything up to the roasting marshmallow step. Place marshmallows on a plate, pop in the microwave for about 10 seconds (REALLY!)--watch carefully as you don't want them to explode (messy, messy!). Lift carefully with a spoon and set on the chocolate piece, top with the lid -- careful--the marshmallow can be quite hot!
  • EASY CLEAN-UP: Bringing a box of crackers, a jar of p-butter and a knife AND the roasting sticks AND the bag of marshmallows can be a hassle--and in the dark, too yet! Instead, win your Martha Stewart "Organized Camper" certificate by putting everything into a cake pan and carrying it jauntily to the fire, say something like: "OOOh, look what good thing we'll be having tonight" -- and waggle your head in a knowing way.
  • PROPER PRONUNCIATION: S'more is a contraction of the words Some More. Do not turn this into a German phrase by calling them "Schhhhmores." Nope. They are Ssss'mores. Thanks.

CAMPFIRE S'MORES

Categories     Chocolate     Dessert     Fourth of July     Winter     Kidney Friendly     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 6 servings

Number Of Ingredients 20

For homemade graham crackers
8 tablespoons softened butter
2 tablespoons brown sugar
2 tablespoons sugar
2 teaspoons honey
1 cup flour
1/4 cup whole wheat pastry flour
pinch of salt
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
For marshmallows
3 envelopes of Knox gelatin
1/2 cup cold water
2 cups granulated sugar
2/3 cups corn syrup
1/4 cup water
1/4 teaspoon salt
1 tablespoon vanilla extract
Chocolate
High-grade bittersweet or milk chocolate (Valrhona, Cacao du Barry, Callebaut, Scharffen Berger)

Steps:

  • Make graham crackers
  • Preheat the oven to 350°F.
  • Cream the butter, sugars, and honey in a mixer on medium speed until soft and fluffy. Sift together the flours, salt, baking soda, and cinnamon, and pour into the mixing bowl. Mix on slow speed until just combined. Turn out the mixture onto a clean surface. Press the crumbly looking dough together with your hands until it just holds together.
  • Press the dough onto a 12 x 16-inch piece of parchment paper. Shape the dough into a rectangle and cover it with another 12 x 16-inch piece of parchment. Roll the dough out very thin by rolling from the middle of the paper outward. If the dough is difficult to roll, add a tiny bit of flour between the parchment and the dough on both sides. Transfer the dough onto a baking sheet, patching it to make an exact rectangle.
  • Bake the dough until the top is golden brown, slightly blistered, and dry-looking, 8 to 10 minutes. Remove the baking sheet from the oven. Use an angel food cake cutter or a fork to mark rows of holes, 1/4 inch apart, all over the dough.
  • Trim the rough outside edges and cut the dough into 14 to 16 squares, about 3 inches each. Use a ruler to make straight cuts and work quickly - the crackers become difficult to cut when they cool. Bake until the cut crackers are a deep golden brown, another 2 to 4 minutes (they will burn quickly, so take care at this stage). Cool them and store them in an airtight container.
  • Make marshmallows
  • In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Soak for 10 minutes. Combine sugar, corn syrup, and 1/4 cup water in a small saucepan. Bring to a boil and boil hard for 1 minute. Pour boiling syrup into gelatin and mix at high speed. Add the salt and beat for 12 minutes. Add vanilla and incorporate into mixture. Scrape into a 9 x 9-inch pan lined with oiled plastic wrap and spread evenly. (Note: Lightly oil hands and spatula or bowl scraper). After pouring marshmallow mixture into the pan, take another piece of plastic wrap and press mixture into the pan.
  • Let mixture sit for a few hours. Remove from pan, dredge the marshmallow slab with confectioners' sugar and cut into 12 equal pieces with scissors (the best tool for the job) or a chef's knife. Dredge each piece of marshmallow in confectioners' sugar. Broil the marshmallows until brown, or toast over campfire or hot coals.
  • Assemble
  • Place a cooked marshmallow on top of a graham cracker. Top the marshmallow with shaved bittersweet or milk chocolate and place another graham cracker on top of the marshmallow to make a sandwich. Garnish the sandwich and plate with a bit more shaved chocolate.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the s'mores will be.
  • If you're using graham crackers, break them into small pieces before assembling the s'mores. This will make them easier to eat.
  • Don't overcook the marshmallows. You want them to be melted and gooey, but not burnt.
  • If you're using a campfire, be careful not to let the s'mores catch fire. Keep them close to the heat, but not too close.
  • If you're using a kitchen torch, hold the torch close to the marshmallow until it's melted and gooey. Be careful not to burn the marshmallow.
  • Serve the s'mores immediately. They're best when they're hot and gooey.

Conclusion:

S'mores are a classic campfire treat that can be enjoyed by people of all ages. They're easy to make and only require a few simple ingredients. With a little practice, you'll be able to make perfect s'mores every time. So next time you're around a campfire, be sure to give s'mores a try. You won't be disappointed.
