KALE WITH CANNELLINI BEANS
I found this recipe in Deborah Madison's book Vegetarian Cooking for Everyone. I used it as part of a meal that i was creating that needed to contain 45 or fewer carbs. My guests, one of whom who does not like kale, loved the mixture of the beans and the kale and really enjoyed this dish. Next time, I might make some croutons to sprinkle on top of it as well to give it a bit of crunch.

Steps:
- If you are serving over pasta cook according to package but reserve 2 cups of the pasta water.
- Saute garlic and leeks in olive oil over medium heat. Add red pepper flakes and salt. Be careful not to brown the garlic; it will be bitter if you do.
- Add kale and the drained and rinsed beans. Add reserved pasta water a bit at a time, just enough to have enough liquid for the kale to wilt and become tender. Be sure to taste the kale and bean mixture. Adjust seasoning as needed.
- Add drained cooked pasta directly to the bean and kale mixture. Add additional pasta water if the mixture is dry, and add more olive oil if desired.

Tips:
- Choose fresh ingredients: Use fresh, high-quality vegetables and herbs for the best flavor. Look for kale with dark, leafy greens and cannellini beans that are plump and firm.
- Prepare the beans properly: If using dried cannellini beans, soak them overnight before cooking. This will help them cook more evenly and reduce the cooking time.
- Cook the kale properly: Kale can be cooked in a variety of ways, but it is important not to overcook it. Overcooked kale will become tough and bitter. Sautéing or steaming kale for a few minutes is a good way to preserve its nutrients and flavor.
- Use a variety of spices and herbs: Don't be afraid to experiment with different spices and herbs to create a flavorful ragu. Some good options include garlic, onion, rosemary, thyme, and red pepper flakes.
- Serve the ragu with your favorite sides: Cannellini and kale ragu can be served with a variety of sides, such as pasta, rice, or bread. It can also be used as a filling for tacos or burritos.
Conclusion:
Cannellini and kale ragu is a delicious and versatile dish that can be enjoyed for lunch or dinner. It is packed with nutrients and flavor, and it can be easily customized to your liking. Whether you are a vegetarian or meat-eater, you are sure to enjoy this hearty and satisfying ragu.
