2 cups cooked white quinoa (cooled)
1 cup halved cherry tomatoes
1 cup cooked chickpeas
1/2 cup basil leaves (torn into pieces)
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 teaspoon lemon juice
1 garlic clove (crushed)
1 teaspoon salt
1 teaspoon fresh cracked pepper (+ more for serving)
1/2 teaspoon dried oregano
Pinch of red pepper flakes (optional)

Steps:

  • In a large bowl, combine the quinoa, tomatoes, chickpeas and basil. Toss to combine.
  • Whisk together the dressing ingredients, reserving a bit of pepper to garnish, in a small bowl. Pour dressing over quinoa salad and stir together until evenly coated.
  • Garnish with some fresh cracked pepper if desired.

2 tablespoons extra virgin olive oil (divided)
1 cup quinoa
2 cups chicken broth (low sodium)
1 cup cherry tomatoes (sliced in half)
1 cup fresh mozzarella
10 leaves basil (cut chiffonade)
2 tablespoons lemon juice
Salt and pepper to taste

Steps:

  • In a medium pan, heat half of the olive oil (one tablespoon) over medium-high heat, toast the quinoa for 3-4 minutes until lightly brown and fragrant.
  • Add the chicken broth and bring to a boil. Cover and reduce heat to low. Cook for 15 minutes then remove from heat. Fluff quinoa with a fork and set aside.

6 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
2 x 150g cans undefined
60g baby spinach , shredded
½ cucumber , diced
small bunch of basil , leaves torn
125g buffalo mozzarella , drained and sliced
3 large vine tomatoes , at room temperature, sliced
