5 medium fist-sized apples (I used Cortlands), peeled, cored, & sliced thin
1 1/2 c all-purpose flour
2 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1 1/2 c brown sugar
2 eggs
1/2 c melted butter
1 tsp vanilla extract
1 c + 1/4 c coarsely chopped pecans
1/4 c milk

Steps:

  • 1. Preheat oven to 350. Grease or spray a 9 x13 pan.
  • 2. Mix flour, baking soda, cinnamon, and salt in a bowl. Set aside.
  • 3. In another bowl, mix brown sugar, eggs, melted butter, vanilla, and 1 cup of the chopped nuts (keep the other 1/4 C for topping).
  • 4. Stir in dry ingredients. When well-mixed reserve 1 cup for topping.
  • 5. Pour into pan (it may be hard to spread but it will eventually, lol). Bake that for 20 minutes.
  • 6. While baking, melt the caramels and milk in the microwave 2-3 mins. Stir carefully after each min (this is also not easy to do but it eventually will get smooth and creamy. Cool that for 5 minutes.
  • 7. When the crust comes out of the oven, drain any juice from the apples. Pour the apples on the crust and spread evenly.
  • 8. Then pour the caramel over the apples staying about 1/2" away from the edges.
  • 9. Then drop teaspoons of the reserved batter over that spreading as well as you can. Sprinkle with reserved chopped pecans.
  • 10. Return to oven and bake for 15 - 20 minutes at 350. Cool well before trying to cut.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine cream, 1/2 cup brown sugar, 3 tablespoons butter, and 3 tablespoons white sugar in a small, heavy saucepan over medium-low heat. Cook, stirring constantly, until sugars dissolve, 2 to 3 minutes. Bring sauce to a simmer, stirring frequently. Cook until slightly thickened, about 7 minutes. Remove from heat and stir in whiskey.
  • Combine 1 3/4 cups flour, 1/3 cup white sugar, 2 teaspoons orange zest, and salt in a food processor; pulse to briefly combine. Scatter 3/4 cup butter pieces over the flour mixture and process until dough starts clumping together.
  • Press dough over the bottom of a 9x13-inch baking pan. Brush egg white over dough.
  • Bake in the preheated oven until lightly golden, about 18 minutes. Cool on a wire rack.
  • Combine apples, apple juice, 1/4 cup brown sugar, 1/4 cup white sugar, lemon juice, and apple pie spice in a large skillet. Bring to a boil; cook, stirring frequently, until mixture thickens and looks dry, 18 to 20 minutes. Remove from heat and let cool. Stir in 1 tablespoon orange zest.
  • Place 1 1/4 cups flour and 1/3 cup white sugar in a food processor; pulse briefly to combine. Scatter 1/2 cup butter pieces and walnuts over flour mixture. Process until topping mixture starts to clump together. Pour into a bowl. Squeeze topping mixture with your fingertips to form clumps the size of peas.
  • Spread cooled filling evenly over dough. Drizzle 1/2 the caramel sauce on top. Sprinkle topping evenly over caramel.
  • Bake in the preheated oven until edges are light golden, about 35 minutes. Place pan on a wire rack to cool for 10 minutes. Drizzle remaining caramel sauce on top. Let cool completely, about 15 minutes. Cover with aluminum foil and refrigerate until firm, about 1 hour. Cut into bars.

1/2 cup sugar, divided
2 tablespoons sugar, divided
1/2 teaspoon ground cinnamon

1/2 cup caramel topping
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 cup unsalted butter, softened

Steps:

  • Preheat oven to 350ºF.
  • In a medium bowl, combine flour and brown sugar.
  • Cut in butter with a pastry blender or two forks until mixture is crumbly.
  • Press evenly into a 13 by 9 by 2-inch baking pan lined with heavy-duty aluminum foil.
  • Bake 15 minutes or until lightly browned.
  • In a large bowl, beat cream cheese with 1/2 cup sugar with an electric mixer at medium speed until smooth.
  • Then add eggs, one at a time, and vanilla.
  • Stir to combine.
  • Pour over warm crust.
  • In a small bowl, stir together the chopped apples, 2 tablespoons sugar, cinnamon, and nutmeg.
  • Spoon evenly over cream cheese mixture.
  • Sprinkle evenly with Streusel topping.
  • Bake 30 minutes, or until filling is set.

1 ½ cups quick-cooking oats
¾ cup butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch glass baking pan.
  • Place condensed milk and caramels in the top of a double boiler over simmering water on low heat. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until melted, about 5 minutes.

Steps:

  • Preheat oven to 350 degrees F. Grease a 15 x 10 x 1 inch pan.
  • In a small pan over low heat, melt the butter or margarine. In large bowl, combine 2 cups flour, 2 cups quick cooking oats, brown sugar, baking soda, and melted butter or margarine. Mix until crumbly. Press half of mixture (about 2-1/2 cups) in the greased pan. Set aside the rest. Bake for 8 minutes.
