2 homemade pie crust (or pre-made pie crust (one for the bottom crust and one for the lattice top))
8 large granny smith apples (peeled, cored, sliced)
1 Tablespoon fresh lemon juice
¾ cup granulated sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
dash of salt
1 Egg yolk plus 2 tbsp water for egg wash
1 1/2 cups heavy cream
1 cup granulated sugar
1/3 cup light corn syrup
1 teaspoon salt
¼ cup salted butter
1 teaspoon vanilla extract

Steps:

  • Prepare the caramel sauce and set aside.
  • Preheat the oven to 400°. Press the bottom crust into a 9 inch pie pan and trim the excess with a sharp knife. Set in the fridge until the filling is ready.
  • In a small bowl mix the sugar, cornstarch, cinnamon, nutmeg and salt. In a medium bowl toss the sliced apples together with the spiced sugar mixture and the lemon juice. Pour into the chilled pie shell.
  • Generously drizzle about half of the caramel sauce over the apples and then top with the lattice crust. Brush the top crust with the egg wash and sprinkle with course sugar.

3 ready-to-use refrigerated pie crusts
3 cups apples, peeled and diced extra small (I used Granny Smith and Gala)
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 cup sugar
1 cup all-purpose flour
1 cup KRAFT Caramel Bits (Find these in an 11 oz bag, next to the chocolate chips in your grocery store.)
1 egg
1 Tbsp. water
sugar for dusting crusts

Steps:

  • Preheat the oven to 400ºF.
  • Slice each of the rolled pie crusts into quarters. You'll end up with 12 triangles, slightly rounded on one end. Set the pieces aside and make the filling.
  • Add the flour and spices to the diced apples and mix to thoroughly combine, being sure all the apple pieces are coated.
  • Mix the egg and water to create the egg wash.
  • Take one dough triangle and brush the entire surface, lightly, with the egg watch.
  • Add 2 - 3 Tablespoons of the apple filling to one side of the triangle.
  • Sprinkle about 1 Tablespoon of the Kraft Caramel Bits over the apple filling.
  • Fold the empty half of the dough over the filled side and seal all the edges by pressing them together with your fingers.
  • Cut two or three decorative slits in the top of the crust to allow steam to escape.
  • Brush the top of the pie pocket with a light coating of egg wash. Sprinkle with a little extra granulated sugar, if desired. I like the extra crispness and "shine" the sugar crystals create.
  • Place on an ungreased baking sheet and repeat the steps with all the remaining pie crust triangles.
  • Bake the pie pockets for 15 - 20 minutes at 400 degrees. Watch carefully in the last few minutes to prevent burning. You want them to be a beautiful golden brown, which was achieved in my oven after 17 minutes.
  • Remove the pies from the oven and cool for 10 or 15 minutes before serving them.
  • We actually loved them cold from the fridge, as well as warm.

35 caramels
1 tablespoon water
1/4 cup butter, melted
1/2 cup packed brown sugar

Steps:

  • Place apples in a strainer to drain. Place caramels and water in a double boiler or metal bowl over simmering water; heat for 10 minutes or until caramels are partially melted. You know how with a traditional apple pie some of the apple juices will caramelize as it bakes and bubble out of the pie and bake into and onto the flaky crust? That's how this whole pie is.

6 tablespoons unsalted butter
½ cup white sugar
½ cup brown sugar
¼ cup water
¼ teaspoon cinnamon
1 pinch salt
5 apples - peeled, cored and sliced
1 pastry for double-crust pie (see footnote for recipe link)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine butter, white sugar, brown sugar, water, cinnamon, and salt in a saucepan over medium heat. Bring to a boil, remove from heat and set aside.
  • Roll out half the pastry to fit a 9-inch pie plate. Place bottom crust in pie plate; pour in apple slices.

3 granny smith apples, peeled, cored and chopped
3/4 cup brown sugar
3 -4 tablespoons butter
1/4 cup apple juice
1/4 cup heavy cream
1/4 teaspoon apple pie spice
1 tablespoon cornstarch
1/4 cup soft caramel (about 8 pieces)
double crust, pie mix prepared
1 egg, lightly beaten

Steps:

  • Combine apples, sugar, butter,juice, cream, spices, cornstarch and caramels in a skillet.
  • Bring to boiling over high heat, stirring frequently, 8-10 minutes.
  • Lower heat to medium; cook for another 2-3 minutes.

1 pinch kosher salt
3 sticks unsalted butter, cut into 1/2 in (1.24 cm) and frozen for 15 minutes
¾ cup water, ice water, plus more as needed
1 large egg, with 1 tablespoon water
2 tablespoons unsalted butter
3 lb Granny Smith applesGranny Smith apples, peeled and sliced into ¼-inch (6 mm) wedges
3 lb honeycrisp apple, peeled and sliced into ¼-inch (6 mm) wedges
1 lemon
1 ½ cups brown sugar
1 teaspoon kosher salt
1 tablespoon pumpkin pie spice
1 ½ teaspoons vanilla bean paste
¼ cup cornstarch
3 tablespoons water
1 cup apple cider
1 ½ cups granulated sugar

Steps:

  • Make the pie dough: In a large bowl, mix together the flour and salt. Add the butter and toss to coat each cube with the flour, then smash each piece of butter with your fingers.
  • Add the ice water, 1-2 tablespoons at a time, and continue to toss until the dough holds together when pressed between your hands. You may not need all of the water, but if the dough is too dry, add more, 1 teaspoon at a time, as needed. The dough should not be very tacky or sticky.

  • Transfer the assembled pie to the freezer for 20 minutes, until firm.
  • Preheat the oven to 350°F (200°C). Line a baking sheet with aluminum foil.
  • Place the pie dish on the prepared baking sheet, then transfer to the oven and bake for 80-90 minutes, covering with foil halfway through. Cook until the juices are bubbling and the crust is golden brown. Remove the pie from the oven and let cool for at least 1 hour.
  • Meanwhile, make the salted caramel: Add the sugar, water, and corn syrup to a large saucepan over medium-high heat. Bring to a low boil and cook until the sugar dissolves and mixture starts to turn a light copper color, about 10 minutes.
