Categories     Cheesecake

Time 3h20m

Yield 10 serving(s)

Number Of Ingredients 18

12 crunchy oatmeal cookies
1/2 cup pecan pieces
1/4 cup unsalted butter, melted
2 tablespoons unsalted butter
1/4 cup light brown sugar, packed
1 teaspoon vanilla
1 tablespoon rum
3 firm bananas, sliced
2 lbs cream cheese, at room temperature
1 cup light brown sugar, packed
2 tablespoons unsalted butter, melted
5 large eggs
2 teaspoons vanilla extract
1 teaspoon rum extract
1 1/2 cups sugar
1/4 cup water
1 tablespoon corn syrup or 1 tablespoon lemon juice
1 cup whipping cream

Steps:

  • Crust : For crust, preheat oven to 350 degrees F. and grease the bottom of a 9-inch springform pan and wrap the pan in foil.
  • In a food processor, pulse oatmeal cookies with pecans until an even crumble. Add melted butter and pulse to combine. Press into the bottom of prepared springform pan (not up the sides) and bake for 12 minutes. Allow to cool while preparing bananas.
  • Banana Layer : For bananas, heat a sauté pan over medium-high heat and add butter and brown sugar, stirring until melted and bubbling. Stir in vanilla and rum and add bananas. Stir just to coat and warm and pour into cooled crust.
  • Cheesecake : For cheesecake, beat cream cheese until fluffy, scraping down the sides of the bowl often. Add brown sugar in 2 additions, beating well after each addition. Beat in butter. Add eggs, one at a time, and beat well after each addition. Stir in vanilla and rum extract and pour cheesecake batter over caramelized banana layer in springform pan.
  • Bake cheesecake in a water bath: place springform pan into a baking dish and pour hot tap water around it, to come halfway up the pan. Bake for 30 minutes, then reduce oven temperature to 325 degrees F. and bake for another 30 to 40 minutes, until filling puffs just slightly around edges but still moves a little in center when shaken.
  • Remove pan from water and allow to cool for 2 hours before refrigerating overnight.
  • Caramel Topping : For caramel topping, combine sugar, water and corn syrup or lemon juice in a pan. Bring to a boil without stirring and cook, uncovered, until it turns a rich amber colour. While cooking, occasionally brush down the sides of the pot with a brush dipped in cool water.
  • Once sugar has reached desired colour, remove from heat and carefully stir in whipping cream (watch out for the steam and bubbling). Return to medium heat and simmer until reduced by a third, stirring occasionally, about 5 minutes. Chill until thickened but still fluid, about 15 minutes. Pour caramel over cheesecake and chill completely. (This can be done up to 8 hours before serving).
  • To serve, run a knife carefully along the inside of the pan to loosen, remove pan and slice with a hot, dry knife.

2 cups all-purpose flour
3 eggs
¼ cup butter, melted
3 tablespoons granulated sugar
3 cups milk
½ cup butter
1 cup brown sugar
1 teaspoon cinnamon
3 bananas, sliced
whipped cream, as desired
caramel sauce, as desired

Steps:

  • In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.

EASY CARAMELIZED BANANAS

Easy Caramelized Bananas image

These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

Provided by Maito

Categories     Breakfast

Time 10m

Yield 2 serving(s)

Number Of Ingredients 3

2 -3 bananas
4 -6 tablespoons granulated sugar (or more)
cooking spray (regular or butter flavor)

Steps:

  • Slice bananas into thick coins or lengthwise strips, depending on your preference.
  • Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
  • Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
  • Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
  • Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
  • Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
  • Soak pan in hot water to facilitate cleaning.

Tips:

  • To ensure that the taquitos are crispy, use ripe bananas. Unripe bananas will not be as sweet and will not hold their shape as well.
  • If you don't have a deep fryer, you can shallow fry the taquitos in a large skillet over medium heat. Just be sure to add enough oil to cover the taquitos halfway.
  • For a healthier version of the taquitos, you can bake them in the oven at 400 degrees Fahrenheit for 15-20 minutes, or until they are golden brown and crispy.
  • Serve the taquitos with your favorite dipping sauce, such as chocolate sauce, caramel sauce, or whipped cream.

Conclusion:

Caramel banana taquitos are a delicious and easy-to-make dessert that is perfect for any occasion. They are crispy, sweet, and gooey, and they are sure to be a hit with everyone who tries them. So next time you are looking for a quick and easy dessert, give caramel banana taquitos a try.
