Time 1h

Yield 4 to 6 servings

Number Of Ingredients 10

4 to 6 firm Bartlett pears or other dessert variety
1 lemon, juiced
1/2 cup superfine sugar or vanilla sugar
1 vanilla bean or 1 teaspoon pure vanilla extract, if not using vanilla sugar
8 ounces bittersweet chocolate
1/2 cup strong black coffee or 1 teaspoon instant coffee in 1/2 cup boiling water
1/2 cup superfine sugar
1/2 cup heavy cream
1 quart best-quality vanilla ice cream
Chopped pistachios, optional

Steps:

  • Peel, halve, and core the pears and sprinkle over them the lemon juice to stop them from discoloring. In a wide shallow pan (in which the pears will fit in 1 layer - otherwise cook them in batches) put 1 1/4 cups water, the sugar, and the vanilla bean, if using. Bring to a boil, stirring every now and again to make sure the sugar dissolves, then lower the heat slightly and simmer for 5 minutes. Add the vanilla extract, if using. Put the pears into the liquid, cut side down, and raise the heat again so that the syrup boils up and the pears are covered by it. You may need to spoon the syrup over. After half a minute or so, lower the heat, then cover the pan and simmer for 10 minutes; turn the pears, cover the pan again, and simmer for another 10 minutes. Continue poaching until the pears are cooked and translucent; they should feel tender (but not soggy) when pierced. They may need more or less cooking time - it depends on the pears. Take off the heat, keep covered, and leave to cool.
  • Now the chocolate sauce: place the chocolate, broken up into small pieces, in a thick-bottomed pan with the coffee and sugar and melt over a low heat, stirring occasionally. Then pour in the cream, still stirring, and when it is very hot pour into a warmed sauceboat or a bowl with a ladle.
  • To serve, arrange pears cut side down on a big flat plate and pour some syrup over. (Any remaining syrup will keep in the refrigerator or freezer and can be used to pour over apples or other fruit when making pies or crumbles. You can wash the vanilla pod, wipe it and put it in a canister of sugar.) Offer with ice cream, sauce, and pistachios, if using, served separately; allow diners to help themselves.

Pear Belle-Hélène Smoothie image

Number Of Ingredients 9

3 ripe Bosc pears
1 quart cold water
3/4 cup sugar
1/4 cup fresh lemon juice
1 to 2 teaspoon finely grated lemon zest
1 tablespoon pure vanilla extract
2/3 cup milk or pear nectar
2 tablespoons
1/2 cup vanilla bean ice cream

Steps:

  • Using a piece of parchment paper, make a lid to cover the pears by cutting out a round disk that is slightly smaller than the diameter of the pan you will be using to poach the pears. Line a baking sheet with freezer paper. Set aside.Peel the pears and leave the stems intact. Using a melon baller or an apple corer, remove the core from the bottom of the pears (be careful not to break or split the sides of the pear).Combine the water, sugar, lemon juice, lemon zest, and vanilla in a nonreactive heavy medium saucepan and place over medium-high heat. Place the pears on their sides in the poaching liquid and bring to a boil. Reduce the heat to a simmer, cover the pears with the parchment lid, and cook for about 40 to 50 minutes, or until the pears can be pierced easily with a wooden skewer or toothpick, turning the pears occasionally. Remove the pears from the liquid and place them on the prepared baking sheet to cool. Once the pears are cool, remove and discard the stems and cut each pear into quarters. Freeze the pears for 1 hour or more. When you are ready to make the smoothie, place the milk, pears, Hot Fudge Sauce, and ice cream in a blender and mix by using the on/off pulse function until the ingredients are mostly blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour the smoothie into a glass and garnish with a Pear Chip (see Great Garnishes), if desired. From SINFUL SMOOTHIES: more than 130 dessert smoothies & other indulgences. POACHED PEARS BELLE HELENE

Poached Pears Belle Helene image

They say Auguste Escoffier created this dish in honor of the opera, La Belle Helene, but we chefs know the real reason. How else are you going to use up bruised pears in such a delicious and beautiful way?

Provided by Chef John

Categories     World Cuisine Recipes     European     French

Time 3h

Yield 4

Number Of Ingredients 7

6 cups water
1 lemon, zested and juiced
4 Bosc pears - cored, peeled, stems left on
1 vanilla bean
3 cups sugar
1 cup prepared hot fudge topping, or as needed
1 cup vanilla ice cream, or as needed

Steps:

  • Place water in a heavy pot. Stir in zest and juice of 1 lemon. Place pears in pot. Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and split pods to the poaching liquid. Pour in sugar.
  • Bring pot to a simmer over medium-high heat; stir gently to dissolve sugar with minimal jostling of the pears. Reduce heat so pears continue cooking over a steady, gentle simmer. Pears need to stay submerged, so place a small plate over them in the pot to keep them under the liquid. Simmer until pears are just tender, 20 to 25 minutes. (Remove plate to test the pears for doneness.) Remove pot from heat and let pears cool to room temperature in the poaching liquid.
  • Transfer pears and vanilla beans to a storage container and cover with some of the poaching liquid. Cover and refrigerate until pears are thoroughly chilled, several hours or overnight. Reserve all of the poaching liquid (see footnote).
  • Heat hot fudge sauce in a saucepan over medium heat until warm. Dip base of pear into the chocolate and spoon chocolate along the sides except for the top inch or so of the pear.
  • Place dipped pears in individual serving bowls with another generous spoonful of syrup and a small scoop of vanilla ice cream.

CREPES BELLE-HéLèNE

Crepes Belle-Hélène image

Provided by Nigella Lawson

Categories     dinner, quick, dessert

Time 30m

Yield 6 servings

Number Of Ingredients 15

1 cup sugar
1 vanilla bean, split lengthwise
2 strips lemon zest, each about 2 1/2 inches by 1/2 inch
3 large Bartlett pears or other pears suitable for poaching, peeled, cut in two lengthwise and cored
1 cup flour
1 1/3 cups milk
1 large egg
2 tablespoons butter, melted and slightly cooled
8 ounces bittersweet or semisweet chocolate, chopped
1/2 cup strong black coffee or 1 teaspoon instant coffee dissolved in 1/2 cup water
1/2 cup sugar
1/2 cup heavy cream
1 tablespoon Poire William liqueur, optional
6 scoops high-quality vanilla ice cream
Crystallized violets, optional

Steps:

  • Prepare the pears: In a wide saucepan, mix together 1 cup sugar, vanilla bean, lemon zest and 3 cups water. Place over low heat and stir until sugar dissolves. Increase heat to medium and simmer for 5 minutes. Add pear halves and simmer until pears are tender but still keep their shape, about 30 minutes. Transfer pears to a bowl, and set aside. (Vanilla bean may be rinsed, dried and placed in a jar of sugar to make vanilla-scented sugar.)
  • While pears poach, prepare crepes: heat oven to 200 degrees. Mix together the flour, milk and egg until smooth. Transfer to a bowl, and stir in melted butter. Place a nonstick or well-seasoned crepe pan or 8-inch skillet over medium-low heat.
  • Pour a scant 1/4 cup batter into center of pan; lift pan and swirl it so batter covers bottom thinly and evenly. Return pan to heat, and allow it to sit until bottom of crepe is lightly browned, about 1 minute. Flip crepe, and cook other side for 30 to 60 seconds. Transfer to a parchment-paper lined baking sheet, and place in oven to keep warm. (Alternatively, crepes may be allowed to cool for reheating later.) Continue with remaining batter, to make a total of at least 6 crepes.
  • Prepare the chocolate sauce: In a small saucepan, combine chocolate, coffee and 1/2 cup sugar. Place over low heat, stirring occasionally, until chocolate melts. Add cream, return to a bare simmer, and stir until smooth. Stir in liqueur, if using. Pour into a pitcher, and keep warm.
  • To serve: Cut pear halves into thin slices. Arrange crepes on a clean work surface, and cover half of each crepe with pear slices. Fold crepes over to make six semicircles. Use a spatula to transfer crepes to individual serving plates or one large platter. At one side of each semicircle place a scoop of ice cream. Fold other side over to make a fat quarter. Top each quarter with hot chocolate sauce, and garnish with crystallized violets.

Tips:

  • To easily peel the pears, score the bottom of each pear with an 'x' and place in boiling water for 30 seconds, then transfer to an ice bath. The skin should slip right off.
  • If you don't have vanilla bean paste, you can substitute 1 teaspoon of vanilla extract.
  • To make the caramel sauce ahead of time, let it cool completely and then store in an airtight container in the refrigerator for up to 2 weeks. When ready to use, reheat over low heat until melted and smooth.
  • You can also use a different type of ice cream for this recipe, such as vanilla or coffee.
  • For a more elegant presentation, you can drizzle the caramel sauce over the pears and ice cream just before serving.

Conclusion:

Poires Belle Hélène is a classic French dessert that is sure to impress your guests. The combination of sweet pears, rich caramel sauce, and creamy vanilla ice cream is irresistible. This recipe provides easy-to-follow instructions on how to make this delicious dessert at home. With a little effort, you can create a restaurant-quality dessert that will be the star of your next dinner party.
