1/2 teaspoon salt
1/4 teaspoon baking powder
5 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
4 tablespoons (or more) ice water
Filling
1 1/4 cups dried tart cherries, chopped
1/2 cup ruby Port
2/3 cup (packed) golden brown sugar
2/3 cup light corn syrup
3 large eggs
1/4 cup (1/2 stick) butter, melted, room temperature
1 1/2 teaspoons vanilla extract
1 cup walnuts, toasted, chopped
Whipped cream

Steps:

  • For crust:
  • Blend flour, salt, and baking powder in processor. Using on/off turns, cut in butter until mixture resembles coarse meal. Add 4 tablespoons ice water. Process just until moist clumps form, adding more water by teaspoonfuls if dough is dry. Form dough into disk. Wrap in plastic; chill until dough is firm enough to roll out, about 30 minutes.
  • For filling:
  • Preheat oven to 350°F. Boil cherries and Port in heavy small saucepan until Port is absorbed, stirring often, about 10 minutes. Cool completely.
  • Using electric mixer, beat brown sugar, corn syrup, eggs, and melted butter in large bowl until foamy. Beat in vanilla. Stir in walnuts and Port-infused cherries.
  • Roll out dough on floured work surface to 11-inch round; transfer to 9-inch-diameter glass pie dish. Fold overhang under; crimp edges. Pour filling into crust.
  • Bake pie until crust is golden and filling is brown and just set in center, about 50 minutes. Cool pie completely in dish on rack. Serve with whipped cream.

1 2/3 cups/215 grams all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons kosher salt
3/4 cup/170 grams unsalted butter (1 1/2 sticks), melted
1 cup/90 grams walnut pieces or halves (or use almonds)
2 tablespoons unsalted butter, chilled
1/4 cup plus 1/3 cup/115 grams granulated sugar, plus more for finishing the tart
5 tablespoons/40 grams all-purpose flour

1 large egg
1 pound/455 grams pitted cherries, thawed if frozen
2 tablespoons bourbon

1 cup packed brown sugar
2/3 cup maple syrup
5 tablespoons butter, cubed
1/4 cup heavy whipping cream
1/4 teaspoon salt
3 large eggs
2 teaspoons vanilla extract
2 cups chopped walnuts
1 cup walnut halves

Steps:

  • In a small bowl, combine flour and salt; cut in the butter and shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Wrap in plastic. Refrigerate for 2 hours or until easy to handle., Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. 4 large eggs
2 tablespoons heavy cream
1 3/4 cups sugar
1 1/2 cups creme fraiche
3 cups walnut halves, lightly toasted and coarsely chopped

  • Preheat oven to 400 degrees. On a lightly floured surface, roll out dough to a 13-inch round, about 1/8 inch thick. Brush off excess flour; fit dough into a 9-inch pie plate. Trim to a 1/2-inch overhang. Tuck dough under, forming a rim; crimp as desired. Chill 30 minutes.

3/4 cup walnuts (chopped)
20 caramels (unwrapped)
1 (14 ounce) can sweetened condensed milk (divided)
1 egg (beaten, room temp)
4 tablespoons butter (melted and divided)
6 ounces semi-sweet chocolate chips (melted) or 6 ounces milk chocolate chips (melted)

Steps:

  • Preheat oven to 325 degrees.
  • Brush 2 tbsp of melted butter onto pie crust, moistening crust.
