EASY CARAMELIZED BANANAS
These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

Steps:
- Slice bananas into thick coins or lengthwise strips, depending on your preference.
- Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
- Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
- Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
- Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
- Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
- Soak pan in hot water to facilitate cleaning.
CARAMELIZED BANANA WITH WHIPPED YOGURT
Steps:
- Bash the sesame seeds, pecans and almonds in a pestle and mortar and add to a frying pan over a medium-high heat and stir until toasted for 1 minute or so. Add 2 tablespoons maple syrup and stir to coat the nuts. Allow to cook for another minute.
- While the granola is toasting in the pan toss the bananas in the sugar and place onto another frying pan along with the butter. Fry for a minute on either side until caramelised and golden.
- In a medium bowl whisk the Greek yogurt with the remaining tablespoon of maple syrup and the seeds from the vanilla pod. Stir until fully incorporated.
- Spoon the yogurt into the base of a bowl, top with two banana slices per portion followed by the granola.
Tips:
- For the best caramelized bananas, use ripe but firm bananas.
- To prevent the bananas from burning, use a nonstick skillet or pan.
- Cook the bananas over medium heat, stirring frequently.
- Add a little bit of butter or oil to the pan to help the bananas caramelize.
- Once the bananas are caramelized, remove them from the heat and let them cool slightly before serving.
- Whipped yogurt is a great way to add a creamy and tangy flavor to the caramelized bananas.
- To make whipped yogurt, simply whip plain yogurt with a little bit of honey or sugar until it is light and fluffy.
- You can also add other toppings to the caramelized bananas, such as chopped nuts, berries, or granola.
Conclusion:
Caramelized bananas with whipped yogurt is a delicious and easy-to-make dessert that is perfect for any occasion. The caramelized bananas are sweet and flavorful, while the whipped yogurt is light and creamy. This dessert is sure to please everyone at your table.
