PAN-ROASTED RIBEYE WITH CARAMELIZED ONIONS AND WHITE TRUFFLE BUTTER

Pan-Roasted Ribeye with Caramelized Onions and White Truffle Butter image

This is a savory steak with the slight sweetness of caramelized onions and the earthiness of truffle oil. I would serve this with some mashed goat cheese and a nice green veggie. This recipe could be for 2, you and your honey! A nice Cabernet would pair well, but I like so many that it's hard to choose. Cheers.

CARAMELIZED ONION AND ROASTED RED PEPPER LINGUINE

Categories     Onion     Pasta     Pepper     Side     Sauté     Summer     Bon Appétit     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 4 side-dish servings

Number Of Ingredients 9

1 1/2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 1/2 pounds onions, halved, thinly sliced
1 16-ounce jar roasted red peppers, drained, cut into thin strips
1 cup canned low-salt chicken broth
1 tablespoon balsamic vinegar
1/2 tablespoon fennel seeds
12 ounces linguine
1/2 cup freshly grated Parmesan cheese

Steps:

  • Melt 1 tablespoon butter with oil in heavy large skillet over medium-high heat. Add onions and sauté until tender and caramelized, about 20 minutes. Add peppers. Sauté 5 minutes. Add chicken broth, vinegar, and fennel seeds. Reduce heat to medium and simmer until sauce reduces slightly, about 5 minutes. Whisk in rema ining 1/2 tablespoon butter. Season sauce with salt and pepper. Remove from heat and cover to keep warm.
  • Cook linguine in large pot of boiling salted water until just tender but still firm to bite. Drain. Return to pot. Add sauce and toss to coat. Transfer to serving bowl. Sprinkle with Parmesan cheese and serve.

Tips:

  • Choose the Right Cheese: Use a high-quality, flavorful cheese that will hold its own against the strong flavors of the onions, peppers, and cinnamon. A sharp cheddar, Gruyère, or Gouda are all good options.
  • Caramelize the Onions Slowly: Don't rush the process of caramelizing the onions. Cook them over low heat until they are deeply browned and sweet, about 45 minutes to an hour.
  • Roast the Peppers Until Blistered: Roasting the peppers brings out their natural sweetness and smokiness. Roast them until the skins are blackened and blistered, about 20 minutes.
  • Use Fresh Cinnamon: Freshly ground cinnamon has a much more intense flavor than pre-ground cinnamon. If you don't have fresh cinnamon, you can use 1/2 teaspoon of pre-ground cinnamon.
  • Serve Immediately: This cheese spread is best served immediately, while the onions and peppers are still warm and the cheese is melted and gooey.

Conclusion:

Caramelized Onion Roasted Pepper and Cinnamon Cheese Spread is a delicious and versatile appetizer or snack. It's easy to make and can be tailored to your own taste preferences. Serve it with crackers, bread, or vegetables, or use it as a filling for sandwiches or wraps.
