DULCE DE LECHE RICE PUDDING

- In a large Dutch oven, combine the rice, cinnamon stick, cloves and milk. Cook, over medium heat, until it starts to boil. Then, lower the heat to medium-low, cover and cook until the rice is tender, about 20-25 minutes
- Stir in the sweet condensed milk, evaporated milk and salt. Continue cooking over medium-low heat, stirring often, until thickened, about 20 minutes. As the mixture starts thickening, it's important to stir constantly, to prevent it from sticking to the bottom of the pot.
- When the rice pudding has thickened, add the vanilla extract and mix to combine. Remove from heat and let it cool slightly.
- To assemble the individual portions, spoon some dulce de leche in the bottom of glasses, individual dessert bowls or shooters. Add a few spoonfuls of rice pudding. Continue alternating the layers, finishing with a generous layer of rice pudding.
- Sprinkle with ground cinnamon and, if desired, drizzle some dulce de leche on top of the glasses.
- Serve warm, at room temperature, or chilled.

- Step 1 Season chicken with chili powder and salt. Step 2 In large Dutch oven or saucepan set over medium heat, heat 2 tbsp oil. In batches to avoid crowding, add chicken and cook, turning, for 5 to 7 minutes or until starting to brown all over, adding more oil as needed. Using slotted spoon, transfer to plate as chicken is browned. Step 3 Add onion and garlic to oil in Dutch oven set over medium. Cook, stirring frequently, for 3 to 5 minutes or until starting to soften. Stir in rice, chipotle peppers and adobo sauce. Cook, stirring frequently, for 2 to 3 minutes or until well coated. Cook, stirring frequently, for 25 minutes or until chicken is cooked through and rice is tender and has absorbed most of the liquid. Remove from heat. Cover and let stand for 10 minutes. Step 5 Before serving, fluff rice mixture with fork and garnish with cilantro. Recipe Tips: Add 1 cup frozen vegetable medley - such as peas, corn and carrots - in the last 10 minutes of cooking if desired. For a zesty addition, add 1/2 cup sliced green olives or 1/4 cup drained capers with the lime juice in Step 4.

- Pour rice into water mixed with milk. Cook over high heat, stirring occasionally, until mixture is very thick. Saute onion in butter until golden brown. To make chopping easier, dip liver into boiling water for 1 minute or freeze partially. Add liver, egg, onion, sugar, salt, and pepper to rice mixture. - Preheat the oven to 350°F Lightly grease six 6-ounce ramekins and place on a rimmed baking sheet.
- In a heavy-bottomed saucepan, bring the milk to a low simmer over medium heat with the rice, vanilla bean and reserved seeds, and salt. Raise the heat to medium and cook, uncovered, stirring occasionally, until the rice is tender and the mixture is thick and creamy, 20 to 25 minutes.
