I've also made this with chopped dried fig in place of the raisins; dried cherries or cranberries would be good too.

Tips:

  • Choose the right carrots. For the best flavor, use fresh, organic carrots that are sweet and crisp. Avoid carrots that are woody or have blemishes.
  • Roast the carrots properly. Roasting the carrots brings out their natural sweetness and flavor. Be sure to roast them until they are tender but still have a slight bite to them.
  • Use a good quality nut butter. The nut butter is a key ingredient in this spread, so it's important to use one that you like the taste of. I recommend using an all-natural nut butter that is unsweetened and has no added oils or salt.
  • Season the spread to taste. Once you've combined all of the ingredients, taste the spread and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder to taste.
  • Serve the spread immediately or store it in the refrigerator for later. This spread is best served fresh, but it can also be stored in the refrigerator for up to a week. When you're ready to serve it, let it come to room temperature for about 30 minutes before spreading it on your favorite crackers, bread, or vegetables.

Conclusion:

This carrot and nutty spread is a delicious and healthy snack or appetizer that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a healthy and satisfying snack, give this carrot and nutty spread a try!
