Delightful, unusual flavor! A nice departure from casserole recipes that call for cream soups or cheese. Pretty enough for a dinner party. May use other vegetables as well.

ZUCCHINI AND CARROTS WITH GARLIC AND HERBS
I 'adopted' this recipe in August 2005. I have made it and think it is a great recipe as written. I hope you like it as much as I did. I also found it went well with a little lite sour cream spooned on top of each serving for a change. The following words come from the original person who posted this recipe: "A nice summer-time side dish. I suggest cutting the zucchini a bit larger than the carrots, since it cooks faster. Substitute dried herbs if you don't have fresh."

Steps:
- Using a mandoline or other hand-held slicer, cut carrot and zucchini lengthwise into 1/8-inch ribbons. Lay ribbons flat and cut lengthwise into 1/8-inch julienne. In a non-stick skillet heat butter over moderately high heat until foam subsides and sauté carrot, zucchini, and zests, stirring, until vegetables are tender, about 3 minutes. Stir in almonds and season with salt and pepper.
Tips:
- Choose young and tender zucchini and carrots: This ensures a crisp-tender texture and a sweeter flavor.
- Slice the vegetables evenly: This helps them cook evenly.
- Use a large skillet or wok: This allows the vegetables to spread out in a single layer and cook evenly.
- Heat the pan over high heat before adding the vegetables: This helps to sear the vegetables and prevent them from becoming soggy.
- Add a little oil or butter to the pan: This helps to prevent the vegetables from sticking and burning.
- Stir the vegetables frequently: This ensures that they cook evenly and do not burn.
- Season the vegetables to taste: Salt, pepper, and garlic powder are all good options.
- Serve the vegetables immediately: This is when they are at their best flavor and texture.
