Time 20m

Yield 2 serving(s)

Number Of Ingredients 5

2 cups cauliflower, cooked
2 tablespoons matzo meal
2 eggs
salt and pepper
1 cup vegetable oil (for frying)

Steps:

  • Mash cauliflower.
  • Combine with the rest of the ingredients.
  • Form into pattties, and fry.
  • Drain on paper towels.

Tips:

1. Choose the Right Cauliflower: Select a medium-sized cauliflower with a firm, white head. Avoid heads with brown spots or blemishes. 2. Grate the Cauliflower Finely: Use the small holes of a box grater or a food processor fitted with a grater attachment to achieve a fine, rice-like texture. 3. Drain the Cauliflower Well: After grating, place the cauliflower in a colander lined with a cheesecloth or paper towels. Press down to remove as much moisture as possible. This helps achieve crispy latkes. 4. Season Generously: Don't be shy with the seasonings. A good balance of salt, pepper, garlic, onion, and herbs like parsley, dill, or chives enhances the flavor of the latkes. 5. Use the Right Oil: Choose an oil with a high smoke point, such as avocado oil, grapeseed oil, or coconut oil. This prevents the oil from burning and ensures crispy results. 6. Cook Over Medium Heat: Cook the latkes over medium heat to allow them to cook evenly without burning. Adjust the heat if necessary to maintain a steady sizzle. 7. Flip Carefully: Use a wide spatula to carefully flip the latkes once the edges are golden brown and the bottoms are set. Avoid overcrowding the pan to ensure even cooking. 8. Serve with Your Favorite Toppings: Enjoy the latkes with classic accompaniments like sour cream, applesauce, or smoked salmon. You can also get creative with toppings like guacamole, salsa, or your favorite dipping sauce.

Conclusion:

Cauliflower latkes are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner.
