CAVATINI

I found this recipe several years ago in Southern Living magazine and it is wonderful! My Mom really loves this so I always have to make it for her on special occasions. This really makes a HUGE amount...but the ingredients could easily be cut in half. Better yet, one dish could be frozen for later use. Enjoy!

Tips:

  • To save time, use pre-made cavatini pasta. However, if you have the time, making your own cavatini from scratch is a rewarding experience.
  • Be generous with the olive oil when cooking the vegetables. This will help to prevent them from sticking to the pan and will also add flavor to the dish.
  • Don't be afraid to experiment with different types of vegetables. Some good options include broccoli, zucchini, mushrooms, and bell peppers.
  • If you don't have any white wine on hand, you can substitute chicken broth or water. However, white wine will add a more complex flavor to the dish.
  • Serve the cavatini immediately after it is cooked, garnished with fresh parsley or basil.

Conclusion:

Cavatini is a delicious and versatile pasta that can be used in a variety of dishes. Whether you are looking for a quick and easy weeknight meal or a more elegant dish for a special occasion, cavatini is a great option. With its tender texture and mild flavor, cavatini pairs well with a variety of sauces and ingredients. So next time you are looking for a new pasta dish to try, give cavatini a try. You won't be disappointed.
