1 avocados - peeled, pitted and diced
¼ cup chopped green onion
1 ½ teaspoons red pepper flakes
1 tablespoon toasted sesame seeds
1 ½ teaspoons lemon juice
2 teaspoons sesame oil
½ cup soy sauce

Steps:

  • In a medium bowl, combine the tuna, cucumber, avocado, green onion, red pepper flakes and sesame seeds. Pour in the lemon juice, sesame oil and soy sauce, and stir carefully to blend so as not to mash the avocado. Place this bowl into a larger bowl that has been filled with ice. Chill in the refrigerator for 15 minutes, but no longer - the terrific freshness of the fish will be lost.
  • Once chilled, remove the bowl from the ice, and invert onto a serving plate. Serve with toasted bread or your favorite crackers.

2 ripe avocados , stoned and peeled (medium)
½ lime , juiced
2 large ripe tomatoes (225g)
1 very small shallot , quartered
few shakes Worcestershire sauce
1 tsp tomato purée
125g pack fresh crabmeat , a mix of white and brown meat
1 small shallot , very finely chopped
220g can kidney beans , drained
1 ½ tbsp finely chopped coriander
½ tsp ground cumin
½ lime , juiced
sriracha , to serve (optional)
4 tsp bio yogurt
smoked paprika , to serve

Steps:

  • Very finely chop the avocado, tip into a bowl and mix well with the lime juice. Roughly chop the tomatoes, then put them in a bowl with the shallot, Worcestershire sauce and tomato purée. Blitz with a hand blender until very smooth to make a coulis.
  • For the crab verrines, spoon half the tomato coulis into glasses then top with half the avocado mixture. Top with a little brown and white crabmeat.
  • For the Mexican verrines, stir the shallot, beans, coriander and cumin into the remaining tomato coulis, then season to taste with a the lime juice and chilli sauce. Spoon the avocado into glasses and top with the bean mixture. Will keep for up to one day in the fridge.
  • Dust the crab verrines with paprika. Top the Mexican verrines with ½ tsp yogurt, then dust with paprika to serve.

  • In a medium saucepan, cover eggs with 1 inch of water. Bring to a boil; remove from heat. Cover and let stand 12 minutes. Drain eggs; run under cold water until cool enough to handle.

Lemon juice
10 tablespoons sour cream
8 teaspoons chopped chives, approximately
10 tablespoons red caviar
5 teaspoons black caviar (see note)

Steps:

  • Cut avocados in half; remove skin and pits. Slice each half lengthwise into one-quarter-inch-thick slices. You need 20 slices. Brush with lemon juice to prevent darkening. Reserve leftovers for other uses.
  • Put two slices of the avocado together to form a circle. Fill center with one tablespoon sour cream. Sprinkle with one-half teaspoon chives.

My mom gave me this reciped years ago. It is so different from guacamole. Here in west Texas, we get our share of guacamole and this is a welcome change. The flavor of the Italian dressing adds the zing, and the green chilis add a little punch. If you like it hotter, just add one chopped jalapeno. The avocadoes need to be firm enough to chop and not mushy like you want them to be for guacamole. Buy firm, not hard as a rock, avocadoes. Cooking time is for refrigeration. Enjoy!
