1 teaspoon chicken seasoning blend
1 (8 ounce) package Borden® Mozzarella Cheese Slices
4 ciabatta rolls, sliced horizontally
Olive oil
2 cups packaged spring mix lettuce blend
1 tomato, cut into wedges
¼ cup prepared balsamic vinaigrette
½ cup prepared sun-dried tomato mayonnaise
1 ripe avocado, pitted, peeled and sliced

Steps:

  • Preheat grill. Season chicken breasts with chicken seasoning. Grill over medium heat for 5 to 8 minutes on each side or until fully internal temperature reaches 165 degrees F.
  • Top chicken with sliced cheese keep on grill until cheese melts; remove from grill and keep warm. Brush cut sides of rolls lightly with oil; grill for 1 minute.

4 skinless chicken breasts
juice 1 lemon
1 tbsp smoked paprika
olive oil , for drizzling
1 ciabatta loaf
1 garlic clove , crushed
4 tbsp mayonnaise
8 romaine lettuces leaves, torn

Steps:

  • Cut the chicken breasts in half horizontally and lay each between two sheets of cling film. Bash with a rolling pin until about 1cm thick.
  • Squeeze lemon juice over the chicken and dust with the paprika. Season with salt and pepper, and drizzle with a little olive oil. Lay on a hot griddle pan or barbecue and cook for 3-4 mins on each side until charred and cooked through.
  • Halve the ciabatta horizontally and lay, cut side down, on the pan for 1 min. Mix the crushed garlic and mayonnaise, then spread over the cut side of each ciabatta half. Top with the lettuce and chicken, then season with a little salt and pepper. Cut in half to serve.

4 skinless chicken breasts
2 tbsp olive oil
4 rashers smoked bacon
2 avocados
4 ciabatta rolls, split
4 thin slices of your favourite cheese
4 small handfuls baby spinach leaves
mayonnaise , to serve (optional)
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp paprika

Steps:

  • Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.
