1 medium onion, chopped

2 ears corn, kernels removed
2 cups fresh baby spinach, torn into smaller pieces

Steps:

  • In a large stockpot over medium heat, heat the oil until it shimmers, about 2 minutes, then add the onion, garlic, and carrots, and saute for 5 minutes or until the vegetables are slightly soft. 2 medium carrots, chopped
1 bay leaf
2 tablespoons fresh basil
1 teaspoon fresh parsley
2 tablespoons fresh oregano

2 teaspoons good quality olive oil

1 1/2 lbs Italian sausages
1 cup chopped onion
1 teaspoon garlic, minced
1/4 teaspoon ground black pepper
4 cups beef broth
2 cups water
1 1/2 teaspoons italian seasoning
1 1/2 cups peeled and thinly sliced carrots
1 (16 ounce) can whole tomatoes
1 (15 ounce) can kidney beans, drained and rinsed (can use butter beans)
1 (6 ounce) can pitted sliced ripe olives, drained
2 cups diced zucchini
16 ounces tri-color cheese tortellini, cooked al dente and drained

My daughter, who is one of the fussiest people I know, even likes this (although she does manage to avoid getting any chunks of vegetables in her bowl). We like it hot, but you can cool the heat by using sweet sausage and not adding the dried chilis. If you can find them use the mini tortellini.

1 lb hot Italian sausage
1 large onion, chopped
4 cloves garlic, minced
5 cups beef broth
1 cup water
1 cup sliced carrot
1 (2 cup) can diced tomatoes

1 teaspoon dried oregano
1 teaspoon dried chili
2 teaspoons dried parsley
3 ounces tomato paste
1 zucchini, chopped
1 green pepper, chopped
1 red pepper, chopped
1 (8 ounce) package frozen cheese tortellini

  • Remove sausage meat from casing and brown in large pot until crumbly; remove meat and reserve 1 T of drippings.

1 lb swiss chard, sliced in ribbons (red, yellow, or white)
