Yield Makes 4 small loaves

Number Of Ingredients 14

3 cups all-purpose flour
2 teaspoons double-acting baking powder
1 teaspoon baking soda
2 tablespoons sugar
1 cup finely chopped scallion
1 teaspoon freshly ground black pepper
1 1/4 teaspoons salt
1 1/2 teaspoons caraway seeds
1 pound lean bacon, cooked, drained, reserving 2 tablespoons of the fat, and crumbled
2 large eggs
1 1/2 cups milk
3 tablespoons Dijon-style mustard
3 tablespoons vegetable shortening, melted and cooled
2 cups coarsely grated extra-sharp Cheddar (about 1/2 pound)

Steps:

  • Into a bowl sift together the flour, the baking powder, the baking soda, and the sugar. In a skillet cook the scallion with the pepper, the salt, and the caraway seeds in reserved bacon fat over moderately low heat, stirring, until it is soft and let the mixture cool. In a large bowl whisk together the eggs, the milk, the mustard, the shortening, and the scallion mixture, add the flour mixture, and stir the batter until it is just combined. Stir in the Cheddar, divide the batter among 4 buttered and floured loaf pans, each 5 3/4 by 3 1/4 by 2 inches, and bake the breads in the middle of a preheated 350°F. oven for 35 to 40 minutes, or until a tester comes out clean. Remove the breads from the pans and let them cool, right sides up, on a rack. The breads keep, wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.

CHEDDAR, BACON, AND SCALLION SOUFFLé

Categories     Mixer     Egg     Side     Bake     Kid-Friendly     Cheddar     Bacon     Gourmet     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Small Plates

Yield Serves 4 to 6

Number Of Ingredients 8

1/2 cup finely chopped scallion
2 tablespoons unsalted butter
6 slices of lean bacon, cooked, drained, reserving 2 tablespoons of the fat, and crumbled
1/3 cup all-purpose flour
1 1/3 cups milk
cayenne to taste
1 1/2 cups coarsely grated Cheddar (about 6 ounces)
4 large eggs, separated

Steps:

  • In a small heavy saucepan cook the scallion in the butter and the reserved bacon fat over moderately low heat, stirring, until the scallion is softened, stir in the flour, and cook the roux stirring, for 3 minutes. Add the milk in a stream, whisking, and boil the mixture, whisking, for 2 minutes. Remove the pan from the heat and whisk in the cayenne, the Cheddar, and salt and pepper to taste, whisking until the cheese is melted. Add the egg yolks, 1 at a time, whisking well after each addition, and whisk in the bacon. In a bowl with an electric mixer beat the egg whites with a pinch of salt until they hold stiff peaks, whisk about one fourth of them into the cheese mixture, and fold in the remaining whites gently but thoroughly. Pour the mixture into a buttered 1 1/2-quart soufflé dish and bake the soufflé in the middle of a preheated 375°F. oven for 30 to 40 minutes, or until it is puffed and golden. Serve the soufflé immediately.

Tips:

  • Use a good quality cheddar cheese that melts well. A sharp cheddar will give the soufflé a more pronounced flavor.
  • Make sure the eggs are at room temperature before you start cooking. This will help them to whip up more easily and give the soufflé a lighter texture.
  • Don't overbeat the egg whites. Overbeaten egg whites will make the soufflé tough.
  • Bake the soufflé in a preheated oven. This will help it to rise evenly.
  • Don't open the oven door while the soufflé is baking. This will cause the soufflé to fall.
  • Serve the soufflé immediately after it comes out of the oven. It will start to fall as it cools.

Conclusion:

This cheddar, bacon, and scallion soufflé is a delicious and impressive dish that is perfect for a special occasion. It is easy to make and can be tailored to your own taste preferences. Serve it with a simple green salad and a glass of white wine for a complete meal.
