Time 30m

Number Of Ingredients 10

4 thin-sliced chicken breasts (or 2 large chicken breasts cut in half horizontally (about 1 lb. total))
Salt and pepper (to taste)
¼ cup olive oil
2 tablespoons apple cider vinegar (or other vinegar of choice)
2 tablespoons Dijon mustard
2 teaspoons honey
1/8 teaspoon salt and a dash of pepper
¼ cup chopped fresh chives or green onions
1/3 cup chopped (cooked bacon (divided) (about 1 ounce or 7 slices)*)
1 ½ cups shredded cheddar cheese

Steps:

  • Preheat oven to 400F (200C).
  • In a bowl, whisk together olive oil, vinegar, Dijon mustard, honey, salt and pepper.
  • Place chicken in a large baking dish (about 9-inch by 13-inch) that has been sprayed with cooking spray. Sprinkle chicken with a little bit of salt and pepper, to taste.
  • Pour honey mustard sauce over chicken and toss to make sure that each piece of chicken is well coated. Top with chives, half of the bacon, and cheddar cheese (in that order).

Tips:

  • Use a variety of cheeses. Cheddar cheese gives the dish a classic flavor, but you can also try other types of cheese, such as Gruyère, Parmesan, or fontina. This will add a different flavor dimension to the dish.
  • Don't overcook the chicken. Chicken breasts can dry out quickly, so cook them just until they are cooked through. This will help keep them moist and juicy.
  • Use thick-cut bacon. Thick-cut bacon will add more flavor and texture to the dish. If you can't find thick-cut bacon, you can use regular bacon, but cook it until it is crispy.
  • Don't crowd the pan. When cooking the chicken, bacon, and vegetables, don't crowd the pan. This will prevent the food from cooking evenly and will make it more likely to stick to the pan.
  • Season the dish to taste. Once the dish is cooked, season it with salt and pepper to taste. You can also add other spices, such as garlic powder, onion powder, or paprika.

Conclusion:

Cheddar cheese chicken with bacon is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great dish to serve at a party or potluck. With a few simple tips, you can make sure that your cheddar cheese chicken with bacon is cooked to perfection.
