Tips:

  • Use fresh chives for the best flavor. If you don't have fresh chives, you can use 1/4 teaspoon of dried chives.
  • Be sure to grease the muffin tins well before filling them with batter. This will help the cornbread to rise evenly and prevent it from sticking.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Be careful not to overmix the batter. Overmixing can make the cornbread tough.
  • Bake the cornbread until a toothpick inserted into the center comes out clean. Overbaking will dry out the cornbread.

Conclusion:

This cheese and chive cornbread is a delicious and easy-to-make side dish that is perfect for any occasion. It is moist, flavorful, and has a slightly crispy crust. The chives add a subtle onion flavor that complements the cheese perfectly. This cornbread is sure to be a hit with your family and friends.
