Cheese Filled Triangles image

The only tricky part of this recipe is working with phyllo, and once you get the hang of it, it's fun. Sometimes you get a bad batch of phyllo that rips and tears easily, so I always buy an extra just in case. I have frozen these before baking. Just add a few minutes to cooking time when you cook them in a frozen state. I have also doubled this recipe for large parties.

3 tablespoons olive oil
1 onion, finely chopped
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 teaspoon salt
1 (4 ounce) package feta cheese, crumbled
½ cup cottage cheese
1 egg, beaten
1 (16 ounce) package phyllo dough
1 cup unsalted butter, melted

Steps:

  • Heat olive oil in a medium saucepan over medium heat. Slowly cook and stir onion until tender, about 5 minutes. Mix in spinach and salt. Stir in feta cheese, cottage cheese and egg. Cook and stir until thickened, 5 to 10 minutes. Reduce heat to simmer.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Unroll phyllo dough sheets one at a time on a flat surface. Brush with unsalted butter. Cut into strips approximately 5 inches wide. Place 1 tablespoon of the onion, spinach and feta mixture at one end of each dough strip. Fold the end of the strip over the filling so that it forms a triangle. Continue folding the strip in triangles until a small, triangular stuffed pastry remains. Brush with unsalted butter. Repeat with remaining phyllo dough.
  • Arrange stuffed triangles on a large baking sheet. Bake in the preheated oven 12 to 15 minutes, until golden brown. Serve warm.

2 tablespoons soft bread crumbs

12 sheets phyllo dough (14x9 inches)
Butter-flavored cooking spray

Steps:

  • Preheat oven to 375°. In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Add spinach; cook and stir 3-4 minutes longer or until liquid is evaporated. Transfer to a bowl; cool slightly. Stir in cheeses, eggs, bread crumbs, salt and pepper., Place one sheet of phyllo dough on a work surface; spritz with cooking spray. Little spinach-cheese triangles are probably among the most familiar Greek party foods. This recipe is enriched with several kinds of cheese and fresh herbs. The triangles may also be fried. Seal the seam of each triangle closed by brushing with a little water. Heat 2 inches of olive or other vegetable oil in a large skillet and fry the triangles a few at a time. Remove when golden, drain on paper towels, and serve.

4 tablespoons extra-virgin olive oil, plus more for brushing pastry
2 cups chopped, blanched, drained spinach (about 6 cups fresh or 1 pound frozen and defrosted)
1/2 cup chopped fresh mint leaves
1/2 cup chopped fresh flat-leaf parsley
Salt and freshly ground black pepper
1/3 cup ouzo (Greek-style anise liqueur)
1 cup (about 4 ounces) crumbled feta
1 cup (about 4 ounces) crumbled Greek manouri cheese or ricotta salata
1/2 cup (about 4 ounces) fresh anthotyro, whole-milk ricotta, or farmer's cheese
1 large egg, slightly beaten
1 pound (about 18 sheets) commercial phyllo, defrosted and at room temperature
Olive or other vegetable oil for frying, as needed

Steps:

  • Heat 2 tablespoons of the olive oil in a large heavy skillet over medium heat and saute the spinach and herbs for a few minutes until all their liquid has cooked off. Season with salt and pepper. Pour in the ouzo and as soon as it boils off, remove the mixture from the heat. Set aside to cool a little.
  • Combine the spinach and herb mixture with the cheeses in a large bowl. Add the egg and the remaining 2 tablespoons of olive oil. Adjust the seasoning with additional salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Brush a sheet pan with oil, then line it with parchment paper. Place the phyllo vertically in front of your on your work surface. Using a sharp knife, cut lengthwise into 4 equal columns. Stack and cover with a dry kitchen towel and immediately on top of that place a damp kitchen towel.
  • Remove the first phyllo sheet and place it vertically in front of you. Brush lightly with olive oil. Place another sheet on top and brush that lightly, too. Place a teaspoon of the filling on the bottom right-hand corner of the phyllo and fold up like a flag in order to form a small triangle. Place on the baking sheet seam side down. Cover with a kitchen towel as you continue with the remaining filling and phyllo. Brush all the triangles with olive oil. Bake for about 15 minutes, or until the triangles are lightly golden and puffy. Remove and serve.

1/2 lb/225 g ricotta, fresh semisoft farmer's cheese, or Mexican queso fresco
1 large egg
Heaped 1 Tbsp finely chopped fresh cilantro
4 sheets phyllo dough or warqa, plus more in case of breakage
Olive oil for brushing
1 egg yolk, whisked
Honey
Light olive oil or vegetable oil for frying
1 Tbsp toasted sesame seeds

Steps:

  • In a medium mixing bowl, blend the cheese, egg, and cilantro with a fork.
  • On a clean, flat work surface, unroll the phyllo sheets. Cut into strips about 3 in/7.5 cm wide and at least 9 in/23 cm long. Arrange a couple of the strips facing away from you; cover the remaining strips with plastic wrap to keep them from drying out. Lightly brush the strips with olive oil.
  • Place 1 Tbsp of the cheese filling on the end of each strip closest to you. Fold over to form a triangle, then fold again to form another triangle, and so on to the end. Brush the end of the triangle with egg yolk and fold the loose end over the brushed yolk. Place the triangles on a plate without letting them touch. Repeat with the remaining phyllo strips and cheese filling.
  • Have ready 6 dessert plates. Place a generous dollop of honey in the middle of each.
  • In a large skillet or sauté pan, heat at least 1/2 in/1.25 cm of oil until the surface shimmers. Reduce the heat to medium. Working in small batches, gently place the phyllo triangles in the oil and fry, turning once, until firm and golden brown, 30 seconds to 1 minute. Transfer with a slotted spoon to paper towels to drain.
  • Place 2 or 3 rolls on each plate, drizzle with honey, and sprinkle with sesame seeds. Serve hot.

4 tablespoons butter
2 cups finely chopped leeks, white and pale green parts only
16 ounces fresh goat cheese, like montrachet
2 tablespoons chopped fresh thyme
20 sheets phyllo dough
1/2-1 cup melted butter

  • Heat the 3 T oil in a large skillet over medium heat.
  • Add the tomatoes and shallots sauteing until shallots are soft, around 6 minutes.
  • Add the water, vinegar, and sugar.

1 kg beef chuck steak, trimmed of fat, cut into 2cm pieces
1 brown onion, chopped
2 garlic cloves, diced
1 red capsicum, diced
3 teaspoons Mexican chili powder

1 teaspoon paprika
800 g diced tomatoes
3 tablespoons tomato paste
1 cup water
420 g canned red kidney beans, rinsed, drained

4 flour tortillas

1 avocado, diced
sour cream, to serve

Steps:

  • Heat 2 tbs of the oil in a pan over medium-high heat. Add the beef, onion, garlic and capsicum and cook, stirring until beef has browned.
  • Add 2 tsp mexican chili powder,cumin, oregano and paprika and sauté for 2 minutes or until fragrant.
  • Add the diced tomato, tomato paste, water and kidney beans. Bring to the boil.
  • Reduce heat to low and cook, covered, for 20 minutes.
  • Meanwhile to make the quesadillas, sprinkle half the cheese and half of the remaining 1 tsp of Mexican chili powder over one tortilla. Cover with another tortilla.
  • Heat remaining 1 tbs of oil in a pan. Place quesadilla in pan and fry for 2 minutes each side or until cheese has melted. Remove from pan and slice into 8 triangles as you would cut a pizza. repeat with remaining tortillas, cheese and mexican chili powder.
  • Uncover pan with chilli con carne, remove from heat, stir in coriander and season with salt and pepper. Divide chilli con carne among serving bowls and top with avocado and sour cream. Serve with quesadilla triangles and enjoy!

1 lb monterey jack cheese, grated
1 egg, beaten

Steps:

1 small onion
fresh parsley
3 packages (10 oz each) frozen chopped spinach, thawed
1/4 cup olive oil
2 eggs
16 oz feta cheese, drained and crumbled
1 tsp dried oregano
Fresh nutmeg to taste
1 package (16 oz) frozen phyllo dough, thawed to room temp
2 cups butter, melted

Steps:

  • 1. to chop onions in food processor, peel and quarter onion; place in bowl. Pulse 4 to 7 times until onion is finely chopped. Scrape bowl once during chopping. Chop enough onion to measure 1/2 cup. Drain onions, if needed. Set aside 2. to finely chop paresley, place parsley in 1 cup measuring cup. Snip enough parsley with kitchen scissors to measure 1/2 cup. Set aside 3.to drain spinach, place spinach 1 package at a time, in bottom of pie plate. Place another pie plate on top; over sink squeeze plates together and tilt slightly to press excess liquid from spinach. Set spinach aside 4. Preheat oven to 375 degrees. 5. Heat oil over medium high heat in small skillet. Add onion; cook and stir until translucent and golden. 6. Beat eggs in large bowl with electric mixer at medium high speed until light and lemon colored. 7. Stir in onion with oil, feta cheese, parsley, oregano and spinach. Season with nutmet, salt and pepper. 8. Remove phyllo from package; unroll and place on large sheet of waxed paper. Fold phyllo crosswise into thirds. Use scissors to cut along folds into thirds. 9. Cover phyllo with lare sheet of plastic wrap and damp, clean kitchen towel. 10. Lay 1 stip of phyllo at a time on flat surface and brush immediately with melted butter. Fold strip in half lengthwise. Brush with butter agian. Place rounded teaspoonful of spinach fillin on 1 end of strip; fold over 1 corner to make triangle. 11. Continue folding end to end, as you would fold a flag, keeping edges straight. 12. Brush top with butter. Repeat process until all filling is used. 13. Place triangles in a single layer, seam side down, on ungreased jelly roll pan. Bake 20 minutes or until lightly browned. Serve warm.

1 package (16 ounce) phyllo dough
1 cup unsalted butter, melted

Steps:

  • Heat olive oil in a medium saucepan over medium heat. Slowly cook and stir onion until tender, about 5 minutes. Mix in spinach and salt. Stir in feta cheese, cottage cheese and egg. Cook and stir until thickened, 5 to 10 minutes. Reduce heat to simmer.
  • Preheat oven to 400 degrees F (200 degrees C).

1 cup (8 ounces) ricotta cheese

1/4 teaspoon salt
1/8 teaspoon pepper
9 tablespoons butter, melted
30 sheets phyllo dough (14 inches x 9 inches)

Steps:

  • In a large saucepan, bring water to a boil; add asparagus. Cover and cook for 4-6 minutes or until crisp-tender. Drain and immediately rinse with cold water; drain and pat dry. In a large bowl, combine the asparagus, cheeses, onion, garlic powder, salt and pepper., Brush a 15x10x1-in. baking pan with some of the butter. Unroll phyllo sheets; trim short side to fit pan. 1 egg white, slightly beaten
2 tablespoons sliced almonds
2 teaspoons sugar

Steps:

  • Heat oven to 425°F. In medium bowl, cut 3-oz package of cream cheese and the butter into Bisquick mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs. Stir in milk and egg yolk.
  • Place dough on surface well dusted with Bisquick mix; gently roll in Bisquick mix to coat. Knead 10 times. Roll dough into 16x8-inch rectangle.
  • In small bowl, mix 8-oz package of cream cheese, 1/3 cup sugar and the almond extract until smooth. Spread cream cheese filling lengthwise over half of dough to within 1/4 inch of edge; carefully fold dough over filling. Brush egg white over top. Sprinkle with almonds and 2 teaspoons sugar. Cut into 4 (4-inch) squares; cut squares diagonally in half to form 8 triangles. Place on ungreased cookie sheet.
  • Bake about 14 minutes or until golden brown. Serve warm or cold. Cover; refrigerate any remaining triangles.

½ lb. Greek feta cheese, crumbled
½ lb. ricotta cheese (full fat) or Greek anthotiro (if you can find it)
1 lrg. egg, beaten
¼-½ tsp. sea salt
¼ tsp. freshly ground pepper
--- pinch of nutmeg
½ lb. filo dough (I used Fillo Factory), thawed
½ cup extra virgin olive oil, for brushing on the filo (or more if needed)
8 oz. Greek Feta cheese, crumbled
¼ cup plain Greek yogurt
1 TBSP. cider (or red wine) vinegar
½ tsp. sea salt
¼ tsp. freshly ground pepper
3-4 TBSP. extra virgin olive oil

Steps:

  • Preheat oven to 350˚ F. Line two baking sheets with parchment paper and set aside. Remove the package of filo from the refrigerator.
  • Combine cheeses, egg, salt and pepper in a bowl. Stir until blended and set aside.
  • Set up your station: you will need a large cutting board, a spoon, a pastry brush and the filo dough. Unwrap the filo dough and cover it well with plastic wrap and a kitchen towel while you work.
  • Lay one sheet of filo horizontally oriented in front of you on your cutting board. Brush it with olive oil. Place a second sheet of filo on top of the first and brush it with some more olive oil. Run a knife down the filo dough every two inches and cut into eight even strips.
  • Place one spoonful of the cheese mixture at the end of each strip. Lift one corner and fold it over to enclose the filling and make a triangle. Continue folding from side to side till you get to the end of the strip. Brush it with some olive to seal the end. Place on prepared pan, seem-side down. Brush the tops of the triangles with olive oil to keep them moist. Repeat process until you have used up all the filling.
  • Bake for 20-25 minutes or until golden brown. Let cool briefly before serving.
  • In a small food processor, place the feta, Greek yogurt, cider vinegar, salt and pepper and process until fairly smooth.
  • Slowly stream in the extra virgin olive oil, while continuing to pulse (you may need more or less, depending on your desired consistency). Taste and adjust the seasoning.
  • Refrigerate for at least an hour. Bring to room temperature, stir again and serve as a spread for toasted pita wedges, on crostini or with crudités.

Tips:

  • For the best results, use a sharp knife to cut the cheese triangles.
