4 garlic cloves, minced
3 tablespoons vegetable oil
1 (16 ounce) can black beans, drained and rinsed

1/2 cup salsa, plus more served with meal, if desired
3 teaspoons cumin
1/4 teaspoon salt

1 (15-oz) can enchilada sauce
1 tsp ground coriander

1 lb 93% lean ground beef

1 (15-oz) can green chile sauce

Repeat until all tortillas are in the baking dish. Ladle remaining red sauce over the top of the enchiladas, covering them completely. Sprinkle cheese over top. Scatter black olives on top.
