Time 2h3m

Yield 12

Number Of Ingredients 9

2 pounds skinless, boneless chicken breasts
1 (1 ounce) package dry ranch dressing mix (such as Hidden Valley Ranch®)
1 pound bacon
1 green bell pepper, chopped
2 (15 ounce) jars Alfredo sauce, divided
⅓ cup milk
2 cloves garlic, minced
1 (16 ounce) package penne pasta
4 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Arrange chicken on the baking sheet.
  • Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Dice chicken and place in a bowl; add ranch mix and stir until coated.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon grease in the skillet. Crumble bacon into small pieces.
  • Heat reserved bacon grease in the skillet; cook and stir bell pepper until slightly tender, 2 to 3 minutes. Add chicken, 1 jar Alfredo sauce, milk, and garlic; cook and stir until heated through, about 5 minutes.
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Pour 1/2 the jar of remaining Alfredo sauce into a casserole dish; top with 1/2 of the penne, 1/2 of the chicken mixture, 1 1/2 cup mozzarella cheese, and 1/2 of the bacon. Repeat layering with remaining ingredients in the same order ending with 1 cup mozzarella cheese and bacon on top.
  • Bake in the preheated oven until casserole is bubbling and cheese is lightly browned, about 30 minutes.

CHEESY BROCCOLI BACON CHICKEN CASSEROLE

Cheesy Broccoli Bacon Chicken Casserole image

I created this dish to use the broccoli I had bought for the first time in my life (used to hate the stuff!) and to fit my parents' low carb diet. The fastest way to pre-cook the broccoli, chicken and bacon is by using a combination of the microwave and stovetop. I cooked the bacon and chicken in the microwave--separately--and I steamed the broccoli--but you could also nuke the broccoli and saute the other two).

CHICKEN WITH BACON AND CABBAGE

Chicken With Bacon And Cabbage image

Provided by Florence Fabricant

Categories     dinner, one pot, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 10

6 ounces slab bacon, diced
3 1/2-pound frying chicken, cut in eight pieces
1 cup chopped onion
2 cloves garlic, crushed
1 tablespoon white wine vinegar
6 cups chopped cabbage
1 cup dry white wine
1/2 teaspoon thyme
Freshly ground black pepper
1 tablespoon soft butter

Steps:

  • Fry bacon until golden in a heavy three-quart casserole. Remove bacon from pan and drain on absorbent paper.
  • Dry chicken pieces and brown them well, a few at a time, in the bacon fat in the pan. Remove chicken and set aside. Pour all but one tablespoon of the bacon fat out of the pan.
  • Saute the onion in the one tablespoon of bacon fat over low heat until soft but not brown. Add the garlic and saute a few minutes longer. Add the vinegar and deglaze the pan, scraping up any browned particles. Add the cabbage to the pan, cover and cook over very low heat until the cabbage is wilted, 10 to 15 minutes.
  • Stir in the wine, thyme, pepper and the bacon. Return the chicken to the pan. Cover and simmer over low heat about 35 minutes, until the chicken is done.
  • Arrange the chicken on a serving platter. Arrange the cabbage mixed with bacon alongside or around the chicken, draining it well to leave as much cooking liquid as possible in the pan. Cover to keep warm.
  • Briefly boil down the cooking liquid to thicken it slightly. Off heat, swirl in the butter bit by bit. Spoon some of the sauce over the chicken and the rest over the cabbage before serving.

Tips:

  • Choose the right cabbage: For this recipe, it's best to use a green or red cabbage. Napa cabbage or bok choy can also be used, but they will have a slightly different texture.
  • Shred the cabbage thinly: This will help it cook evenly and prevent it from becoming tough.
  • Don't overcook the cabbage: Cabbage should be cooked until it is tender but still slightly crunchy. Overcooked cabbage will be mushy and unappetizing.
  • Use a variety of cheeses: This will add flavor and richness to the casserole. Cheddar, mozzarella, and Parmesan are all good choices.
  • Don't be afraid to add some spice: A little bit of cayenne pepper or chili powder can add a nice kick to the casserole.
  • Serve the casserole immediately: This is when it will be at its best. Leftovers can be stored in the refrigerator for up to 3 days.

Conclusion:

Cheesy chicken bacon cabbage casserole is a delicious and comforting dish that is perfect for a weeknight meal. It's easy to make and can be tailored to your own taste preferences. The cabbage adds a nice crunch and the cheese and bacon make it rich and flavorful. This casserole is sure to be a hit with the whole family.
